This paneer sandwich is a really quick and easy sandwich to make for a filling snack.
Make it for breakfast or for hungry tummies in the evening. It comes together in just 15 minutes.
Paneer or cottage cheese is made with milk and is used regularly in Indian cooking.
You may enjoy these paneer fingers, paneer tikka, Matar Paneer, Khoya Paneer curry, Paneer Bhurji, Palak Paneer and Paneer Makhani
If you don’t have paneer at hand, you could use goat’s cheese or feta. Even cheddar or parmesan works.
Crumbled tofu is a good option for vegans.
Just make sure that the tofu is pressed well to remove all moisture.
This paneer becomes nice and creamy on grilling or air frying which adds to the flavour of this sandwich.

For meat eaters chimi de pierna is a nice pork roast sandwich to try. These corned beef bagel sandwich and tunacado sandwich are nice too.
Ingredients
Paneer or cottage cheese: I have used 8 oz. or 200 gm. block of paneer that has been crumbled or grated.
Green Pepper: I love the crunch and taste of green pepper or capsicum in my sandwiches.
You could use other vegetables too.
Seasonings: I have used simple seasonings like garlic powder, pepper, Italian seasoning and salt.
Feel free to use seasonings of choice.
Green chutney and butter: Apply these generously on the bread slices for a delicious flavour.
You could also use mayo or cream cheese dip here.
Variations
This is a vegetarian recipe. For a dairy-free option, use tofu in place of paneer and plant-based butter instead of dairy butter.
You can also add vegetables like chopped onion, finely sliced and cooked mushroom, boiled corn, grated carrot etc.
For a spicier version, add hot sauce, peri peri seasoning or chilli flakes to your filling.
You can also use any bread you like. I normally make these with wholewheat bread or multigrain bread.
You can make this recipe on grill, stove top or air fryer.
Serving suggestions
Chutney: You can serve the same green chutney on the side that was used to make the sandwich for a zesty kick.
Salad: This paneer sandwich really pairs well with this cucumber and tomato salad, for a wholesome meal.
Fries: This sandwich goes so well with french fries and a drink for a delightful snack or meal.
Toasting: This sandwich can be put in the old fashioned gas stove toasters for a more crunchy sandwich. You can also toast it on a skillet.
Tips
1. For a toasty sandwich, make sure the bread slices are nicely grilled, toasted or air fried.
2. Paneer becomes creamy after grilling and gives a yummy taste.
3. Adjust seasonings as per choice.
4. You can substitute paneer with crumbled tofu, roasted chicken or any other crumbled protein of choice.
5. You can add grated carrot or boiled corn to the sandwich. If you love onion, some chopped onions work well too.
6. For a spicier sandwich, you can add finely chopped chillies or some chill flakes to the filling.
Instructions
Crumble your paneer and keep aside. You can grate it too.
Mix together crumbled paneer with chopped green pepper and spices. Taste and adjust seasoning if required.
Prepare green chutney using cilantro leaves, mint leaves, garlic, green chillies, salt and lemon juice. Make green chutney like this.
Keep aside.
If using butter, melt it or bring it to room temperature so that it is easy to spread. You may also use mayo or cream cheese spread in its place.
To assemble
Choose thick bread slices. I have used wholewheat bread here. Multigrain bread, sandwich bread and others work well too.
Spread butter on one slice and green chutney on the other.
Carefully place the paneer mixture on top of one slice.
Close the sandwich with the other slice.
Grill
Heat a grill. Spray oil if needed.
Place your paneer sandwich and grill for 3 minutes till done.
Stove top
Heat a skillet. Brush with oil or butter.
Please the sandwich and toast both sides till crispy. Serve hot.
Air fryer
Preheat air fryer at 360F or 180C for 4 minutes.
For air fryer, spread butter or mayo on top and bottom sides of the sandwich bread as well. This helps in golden brown colour while air frying.
Place paneer sandwich in air fryer.
Air fry at 360F or 180C for 6-8 minutes till the sandwich is nicely browned. Enjoy your air fryer sandwich.
You can also reheat the leftover sandwich in air fryer.

The chutney worked really well with the paneer, providing a nice contrast to the mildness of the cheese. I used homemade paneer for this and it was great!
