These frozen vegetables are super quick and easy to do in air fryer. They turn out crispy and well seasoned. Perfect side with hardly any work.

I always keep a couple of bags of frozen vegetables in my freezer. I find them very handy to use.

Toss them in my vegetable Upma or use them in my millet khichdi. Sometimes, just make roasted vegetable side with them.

Whenever I want to up the nutritional quotient of a dish, I just use these pre-cut, washed and frozen veggies. So convenient and such a time saver.

Then I started air frying them. So so good! I air fry my protein and then air fry frozen vegetables. A meal is done with hardly any effort.

This is a vegan recipe which is also gluten free.

    Serving suggestions

Side: These frozen vegetables are perfect as a vegetable side to any meal.

Pair them with protein like chicken, steak, tofu or paneer.

You can also have them with pasta or noodles.

Bowl: These work very well in Buddha bowls along with a steamed grain or rice, some protein, pickle and dressing.

Taco or Wrap: Use roasted veggies in your taco or wrap to add nutrition and texture to them.

Pizza: Roasted vegetables can be used as pizza topping.
