    Air fryer Vegetables

    Air fryer vegetables is a delicious way to make roasted vegetables. They turn out perfectly roasted and crispy in the air fryer while using very little oil or no oil. 

    This air fried vegetables recipe is a versatile recipe, as you can use any vegetables in your fridge in this recipe. Air fryer has been a game changer when it comes to cooking vegetables.

    From air frying mushrooms to broccoli, butternut squash to turnips, parsnips, eggplants, radish and green beans, you can pretty much make any vegetable tasty.

    So why not do a combination? You can serve these as a delicious, nutritious and low calorie side. Or use them in a taco, fajitas or burrito.

    I just eat them as it is as a snack. You can also only do air fryer zucchini and carrots. Or add peppers, broccoli, cauliflower, green beans or whatever you have in your fridge.

    Tips to Make Perfect Air fryer Vegetables

    1. Cut vegetables in similar sizes so that they cook evenly.
    2. Use any vegetables in your pantry especially those with similar cooking times. I have used peppers, broccoli, cauliflower, zucchini and carrots. You can also use mushrooms, onion, squash etc.
    3. You can make large batches of air fried veggies. Reheat them and consume after storing in the fridge. They stay good.
    4. You can skip the oil in the recipe and just use water or vegetable broth in its place. Your veggies will not look as golden or plump but will taste good.
    5. Air fry to your taste. I like the veggies to be well cooked but with a crunch and crispy on the edges.
    6. You can vary the seasonings as per your like. Use more of pepper and cayenne if you like them hotter.

    Wash all the vegetables. Dry them and cut them into bite-sized pieces.

    Take olive oil or veggie broth in a bowl and apple cider vinegar in another bowl. Take minced garlic, pepper, Italian seasoning, salt and chilli flakes in another bowl.

    Mix together all the seasonings with the oil and vinegar.

    Pour it over the vegetables in mix well. Do not keep for long after mixing with the veggies or they will release water.

    Preheat air fryer at 180C or 360F for 4 minutes.

    Lay the vegetables in the air fryer basket. I could put in all the veggies at one go.

    Air fry at 180C or 360F for about 8-10 minutes till the veggies look cooked and are crispy on the sides.

    Take them out and serve hot. They are delicious.

    Ingredients
     

    • 1 cup broccoli florets
    • 1 cup cauliflower florets
    • ½ cup carrots
    • 1 red pepper
    • ½ cup zucchini
    • 1 tbsp. olive oil or use veggie broth for no oil
    • 1.5 tbsp. apple cider vinegar or lemon juice
    • 2 tsp. Minced garlic

    • 1 tsp. Himalayan pink salt
