These are the kind of popsicles I end up making on repeat once the weather warms up a bit. They are chocolatey and creamy like a classic fudgesicle, but a little lighter thanks to the yogurt. Not in a "healthy swap" way, just in a way that makes you want another one without thinking too much about it.
What I really like here is the melted chocolate. It gives these a proper rich flavor instead of that slightly flat cocoa taste. And the whole thing comes together in one bowl, no fuss and with only four ingredients.

Ingredient Breakdown
Greek Yogurt: I have used high-protein full-fat Greek yogurt for a softer popsicle that tastes so creamy.
Chocolate: I have used dark chocolate bar here. Hershey's or Ghirardeli works well. Generally, any good quality chocolate works well.
Honey or Maple Syrup: Will depend upon how sweet the chocolate is and how sweet you prefer your fudgesicles to be.
Vanilla Extract: Adds a little flavour.
Milk: You can use regular milk or plant-based milk to dilute the thick yogurt chocolate mixture.

Instructions
Melt the chocolate in a glass bowl. I normally microwave at a time for 30 seconds. It takes about 1.5 to 2 minutes for the dark chocolate squares to melt. Mix with a spoon and keep aside.
In a bowl, add milk to the melted chocolate and mix well. Add vanilla essence and sweetener and mix again.

Now add this to Greek yogurt and mix till well incorporated. Taste it and see if everything tastes balanced.

Remember that the sweetness gets a bit blunt on freezing. Now pour this mixture in your popsicle mold.

You should be able to make 6 fudge pops here. Top with popsicles sticks and keep in the freezer for 8 hours or overnight for freezing.

To take them out, run the molds in warm water for some seconds and gently pull them out. Your delicious chocolate yogurt fudgesicles are done. So much better than store bought, a perfect treat for kids in summer or otherwise. Enjoy!
