    Cucumber Mint Lemonade

    This cucumber mint lemonade is a delightful summer cooler. 

    It tastes so fresh. You can also turn it into an invigorating cocktail as my husband did by adding a shot of vodka.

    I don’t strain the lemonade, but if you like yours super clear then you may.

    You will also love lychee lemonade, brown sugar lemonade, coconut water lemonade and cucumber lemon ginger water.

    Looking for something as refreshing but with alcohol, try this interesting cucumber elderflower martini.

    Simple: This lemonade is super simple and easy to make with ingredients that are there in your pantry.

    Refreshing: Cool cucumber, mint and lemon with soda gives a super refreshing and tasty drink.

    Healthy: Cucumbers are great for hydration, lemons pack in vitamin C punch and mint is a  cooler as well. 

    Together, they are a healthy concoction.

    Ingredients

    Cucumber: I have used one large cucumber, peeled and chopped into pieces.

    Lemons: ½ cup of lemon juice or juice of 4-5 lemons is used.

    Mint: I have used ½ cup full of mint leaves.

    Sugar: I have used ½ cup of sugar in the recipe. You can reduce or increase as per the sweetness you desire.

    Soda: Soda tastes great in this recipe elevating the taste and freshness of this lemonade.

    I have used 4 cups or about 1 litre of club soda or sparkling water here.

    Ice cubes: Perfect for your chilled lemonade.

    Garnish: Cucumber and lemon slices, mint leaves.

    Ingredients for making cucumber mint lemonade: club soda, mint, cucumber cubes, lemon juice, sigar.

    Variations and Substitutions

    Sweeteners: Any sweetener you prefer like agave nectar, brown sugar, jaggery, stevia or honey can be used in this recipe.

    Herbs: Basil works well in place of mint here.

    Fruits: You can add fruits like strawberries or lychees for a sweet fruity touch.

    Serving Suggestions

    Cucumber mint lemonade is perfect as a your afternoon pick me up, after workout, at a party or your BBQ.

    Serve a chilled pitcher and enjoy with friends and family.

    Instructions

    Wash and dry a cucumber. Peel and cut into pieces.

    Juice the lemons and keep aside. You can use bottled lemon juice as well.

    Wash and dry mint leaves.

    In a blender jar, take cucumber chunks and mint leaves.

    Blend them till smooth.

    Add lemon juice and sugar to this puree and blend again to have the lemonade concentrate.

    You can strain this mixture, but I just leave it as it is.

    Chill this lemonade mix for half an hour in the fridge.

    To serve, top a glass with ice cubes, add about ¼ glass of cucumber mint lemonade concentrate.

    Top up with club soda or sparkling water.

    Garnish with cucumber and lemon slices with mint leaves. Serve immediately.

    Choose fresh ingredients: Choosing fresh produce makes the lemonade really tasty and fresh.

    Balance the flavour: Mint can have a sharp taste if used in excess. Adjust the quantity of mint as per your like.

    Serve chilled: This lemonade tastes best when served chilled. Serve it over ice cubes.

    Storage: if planning to store it, make the cucumber lemon mint lemonade mix and store in the fridge for upto 3 days.

    Always add the club soda just before serving.

    3. Can I make it a cocktail?

    Oh yes! It makes a great cocktail. Add alcohol of your choice.

      So clean and fresh! I loved the combo of the cucumber with the mint. I didn't strain it either and agree that it isn't necessary. This drink has a cooling quality that is perfect for summer.
