Egg bites are delicious; the recipe can be modified as per your taste and mood.
I have used cheese, milk and vegetables here.
If you eat meat, you can use chopped ham or bacon as well.

🥘 Ingredients
1. Eggs: This is a recipe where eggs are a centrepiece. I have used medium eggs. If using large eggs, you can have more serves.
2. Vegetables: Chopped scallion or green onion is good. I have used finely chopped mushrooms and onion here.
That way I don’t need to cook them beforehand. You can also use green peppers and tomatoes too.
Remember to chop them fine.
3. Spices: Just salt, pepper and garlic powder works fine for me.
For more heat use chilli flakes.
4. Milk: To make the recipe richer use cream in place of milk.
I have used regular milk.
5. Cheese: Cheese does enhance the taste.
I have used regular processed cheese. Cheddar works really well here.
📌 Variations
This recipe is vegetarian and uses eggs, milk and cheese.
In case you are vegan, you can make the same with chickpea flour in place of eggs, plant-based milk and plant-based cheese.
It will not taste the same though.
For meat eaters, you can add chopped ham or bacon for a smoky bite.
This recipe is already zero oil.
👩🍳 Tips
1. I have found that silicone moulds work really well here.
I have used silicone muffin moulds. They are super easy to clean and demould.
However, you could also use ceramic ramekins or any other kind of round moulds that are okay for use in air fryer.

2. To check if the egg bites are done, you can lightly press the top, it should spring back and not be wobbly.
Or you could insert a toothpick or press a fork into it, it should come out clean.
3. I have used milk and that makes the eggs flavorful and fluffy.
You could use cream for more richness and flavour.
Cheese lends it a delicious flavour, and I would advise not to skip it. If you really must, you can.
Adding garlic powder, pepper and salt gives a nice flavour to the egg bites.
4. You can use any vegetables of choice but cut them into tiny pieces so that they cook along with the eggs.

🍴Storage
- These egg bites taste the best when hot.
- But you can make them in advance and store in the fridge for up to a week. Air fry for a couple of minutes at 320F or 160C to heat them and serve.
🔪 Instructions
Assemble all the ingredients together.
Break 3 medium eggs in a bowl. If using large eggs, use 2.
Add milk to it along with garlic powder, pepper and salt.
Give it a nice whisk.
You could use cream in place of milk as well.
Take silicone cupcake moulds. Fill them halfway with grated cheese and vegetables and other fillings (chopped ham or bacon if you eat meat) of choice.
Preheat Air fryer at 160C or 320F for 5 minutes.
Place the half filled (with fillings) silicone moulds inside the air fryer basket.
Now pour the egg mix on top to come slightly above the cheese-vegetable mix.
Leave ¼ space on top for the egg to cook and expand.
We add the egg after placing silicone mould in the air fryer basket because these moulds are sort of wobbly and may spill over if moved around a lot.
Close the air fryer basket and air fry at 320F or 160C for 7 minutes.
This time could vary slightly with the type of air fryer model.
Open at around 5 minutes into cooking time and check.
At 7 minutes insert a fork or toothpick and check for doneness. Mine came out clean.
The egg bites were done.
In case they are still not done, air fry for a minute more.
Carefully remove the moulds as they are hot.
They look puffed up when done but collapse a bit once slightly cool.
Let them cool down for a couple of minutes and then de-mould. The egg bites slide out easily.
Serve them hot. They are so delicious. Make for a perfect breakfast. Do try.
