Shrimp or Prawns: Use good quality fresh or frozen large shrimp or prawns for this recipe. If using frozen shrimp, do thaw them first.
I leave the tails on for better handling, but you can take them off if you so prefer.
Greek Yogurt: Thick Greek yogurt is used for marinating the shrimp. All the spices and seasonings are added to it and then applied to the shrimp.
Spices and seasonings: Minced ginger and garlic, paprika or Kashmiri chilli powder, tandoori masala or garam masala, salt, pepper and other spices are used in this recipe.
Oil: Mustard oil is used for an Indian touch. You could substitute with extra virgin olive oil.
Lemon Juice: Makes the shrimp juicy and balances the flavors in the marinade.

For lower spice you can omit pepper powder. 4. Use paprika or Kashmiri chilli powder for low heat and a beautiful colour to the chicken. 5. Oil in the marinade helps keep the shrimp moist when cooking. I did not need oil to baste my shrimp. 6.
