Roasted pumpkin is the simplest of dishes to make. Roasting brings out the sweetness of pumpkin in a very likeable manner.
It also makes it creamy and sweet. Somehow one never achieves that with a stove-top version.
I like roasting both pumpkin cubes as well as wedges.

How to Make the Perfect Roasted Pumpkin
1. Cut the pumpkin in wedges, slices or pieces. I sometimes buy the pumpkin pre-cut. That makes it so very easy to cook.
2. Avoid any pumpkin with a very thick skin when roasting it.
3. You can use a number of tasty spice mixes to go with your pumpkin. Just plain olive oil and sea salt is delicious too.
You could try olive oil with garlic, rosemary, paprika and a bit of cinnamon. Pumpkin spice goes great too.
I also love with garlic, salt and pepper. You can really experiment with any spice mix that you like.
4. Cook them soft. I like my pumpkin to be roasted really soft.
Then it tastes the best. I also use roasted pumpkin and mash or blend it to form pumpkin puree for use later.
You can make this wonderful pumpkin puree with the roasted pumpkin. You will also like these pumpkin pancakes and pumpkin pasta.
How to Roast Pumpkin
In Oven:
Just apply about 2 tbsp. of olive oil along with salt to your pumpkin wedges or pieces. Spread on a foil or baking paper on baking tray.
Preheat oven to 400 F or 200 C for 10 minutes. Roast for about 30 minutes for wedges and about 20 minutes for pieces till it gets really well cooked.
Take it out and serve.
In Air fryer:
Just apply about 2 tbsp. of olive oil along with salt to your pumpkin wedges or pieces.
Preheat air fryer to 390 F or 200 C for 5 minutes.
Roast for about 15-20 minutes for wedges and about 10 minutes for pieces till it gets really well cooked.
Take it out and serve.

How to Use Roasted Pumpkin
1. Have it as it is. That’s my favourite way. Serve it with any dip of your choice.
2. Blend it to make pumpkin puree.
3. Have it as a side to your roast chicken.
4. Use it in a salad.

2. You can use any seasoning of your choice.
