Mexican-style street corn on the cob is so flavourful and just the perfect snack. This street food classic is sold in carts in Mexico and is so tasty It is a fantastic side dish for any barbecue or just a side or snack.
You can grill the corn, cook them on stove top or air fry them. The smoky corn is ready for toppings.

Ingredients
1. Corn on the cob: 4 ears of corn are used here. I cook them without the husk.
2. Mayonnaise: 2 tbsp. mayonnaise
3. Cheese: Crumbled cotlja cheese or feta is used here.
4. Lime: 1 lime is used in this recipe.
5. Cilantro: 1 tbsp. chopped cilantro is used for garnish.
6. Chilli powder: ½ tsp. chilli powder is used for garnishing.
Variations and Substitutions
This recipe is traditionally vegetarian. For a dairy-free version, you can use vegan mayo and vegan parmesan.
In case, you can’t find Cotlja cheese, Parmesan or feta works well.
You can skip chilli powder to avoid heat. You can also add other toppings of choice like chopped herbs or nuts.
Instructions
Prepare your corn first. I love to grill the corn as they get a nice, smoky taste that way. I generally dehusk them and then grill either over a grill or on stovetop till they get nice char marks.
You can also air fry corn on the cob like here. Air fry 2-3 corn on the cob at one time in air fryer basket.
Air fry at 200C or 390F for about 10-12 minutes till the corn gets nicely roasted and juicy.
Once the corn is prepared, it is ready for the toppings.
Brush mayo all over the prepared corn. Top with crumbled cotlja cheese or feta cheese, sprinkle some chilli powder, salt and lemon juice and top with cilantro.
Serve immediately. Your delicious Mexican corn on the cob is ready.
Expert Tips
1. For the best smoky taste, char the corn perfectly by turning them over constantly to ensure even char. In case you don’t like char marks, you can grill the corn inside the husk.
2. Apply mayo and other toppings just before serving. Do not apply toppings ahead of time. You can do the other prep before hand.
3. Serve corn on the cob hot so that the cheese melts just slightly and tastes perfect.
4. Leftovers can be stored, reheated and served. You can reheat the grilled corn on the cob easily but apply toppings only before serving to retain freshness.
5. Frozen corn on the cob does not work as well as fresh corn here.
