    Air fryer Stuffed Mushrooms

    These air fryer stuffed mushroom are really easy to make with just four ingredients. They are low carb, keto friendly and so very delicious. Must try appetizer.

    Mushrooms are a favourite in my home. They are healthy, nutritious and low calorie. What’s not to like?

    You will love these breaded air fryer mushrooms, simple garlic mushroom in my air fryer and Crunchy Oyster Mushrooms in air fryer.

    These stuffed mushrooms are super easy to make and a big hit in my home.

    Tips and Tricks to Make the Best Stuffed Mushrooms:

    1. Choose fresh mushrooms. Avoid those that look grey or wrinkled.

    2. I use button, cremini or baby portobello mushrooms for this recipe. Remove the stump from the cap and stuff the cavity thus created.

    3. Do not soak mushrooms in water while cleaning since they absorb a lot of water and then become soggy. I just give them a quick rinse in a colander and then wipe them with a towel till they are dry.

    4. I prefer to use just the chopped stumps seasoned with salt and pepper and cheese for the filling. It is delicious and easy. But you can easily use breadcrumbs with cheese or finely chopped veggies like onions, bell peppers, garlic with seasonings and cheese, cooked quinoa or broken wheat seasoned and with cheese.

    5. These taste best hot but you can store them in the fridge and reheat in the airfryer.

    6. Make sure that stuffed mushrooms stay upright when you put them in for air frying or your cheese will melt all over your air fryer basket. It has happened to me and I just scooped up all the melted cheese and licked it. J

    7. You can use parchment paper to make clean up easier and to collect any cheese that melts on the sides of the mushrooms.

    Rinse the mushrooms in a colander with running water and quickly dry them.

    Remove the stumps carefully and keep aside.

    Finely chop the stumps and season with pepper.

    Grate cheese. Use cheddar or parmesan or a combination of both.

    Preheat air fryer at 180C or 360F for 4 minutes.

    Now add salt to the finely chopped stumps.

    Mix with cheese and fill into the mushroom cavities.

    I went overboard and put more grated cheese on top. Yummy.

    Lightly brush the air fryer basket and carefully lay the stuffed mushrooms facing upwards.

    Air fry for 6-8 minutes at 180C or 360F till mushrooms look cooked and the cheese has melted.

    Time will vary depending upon the size of the mushrooms.

    For larger sized mushrooms, you may take 10-12 minutes. Just keep an eye when air frying.

    Serve the delicious stuffed mushrooms with a dip of your choice.

    I recommend Chipotle mayo or blue cheese dip. We gulped them down as is and they were so good!

    FAQs

    1. Why are my stuffed mushrooms soggy?

    Mushrooms release a lot of water while cooking. Keep them dry before cooking. In case you soak your mushrooms while washing, they will get very soggy while cooking.

    2. Do you wash mushrooms before cooking them?

    I actually do. I keep them in a colander and wash them under running water for just the minimum amount of time. I then dry them with a towel or paper napkin.

    3. Can you freeze stuffed mushrooms?

    Yes, you absolutely can. After putting in the stuffing, freeze them. You can air fry or bake them from frozen.

    4. Can you store cooked stuffed mushrooms in the fridge?

    Yes, you can store cooked stuffed mushrooms in the fridge for upto 5 days.
