Hara Bhara Kebab are so named after their green colour. These kebabs are super healthy as they are made with spinach, peas, potatoes and spices.
My version of frying with minimal oil on the skillet or in Air fryer is healthy and pretty tasty as well.
If you are looking for a nice evening snack or an appetizer, then you must try this hara bhara kabab recipe.

Mostly served in restaurants, these are very easy and healthy to make at home.
Variations:
1. I have used oats as a binding element. This makes the recipe gluten free. You can use semolina, almond flour or roasted gram flour (besan) as well.
2. Mashed cottage cheese or paneer, tofu or cooked soy granules can be added to increase the protein content of these kababs.
3. You can use sweet potato or raw banana/plantain in place of potato.
4. Coarsely powdered almond or walnut can be added as well.

Step-by-step Recipe:
Assemble all the ingredients for making the kabab.
Mash 2 boiled potatoes. Blend together peas, spinach, grated ginger, green chillies and cilantro leaves and puree in a blender without adding water.
Add this paste to mashed potatoes, oats or semolina, garam masala, coriander powder, chaat masala, salt and pepper powder.
2. Mix well.
3. Form round patties with your hands.
For Air frying
4. Preheat Air fryer at 200 C or 390 F for 5 minutes.
Brush basket with oil and lay the kebabs in one row.
Air fry the patties after brushing with oil for 10-12 minutes. No need to flip midway.
You can use parchment paper to prevent the patties for sticking.
Flip midway if using parchment paper. Air fry for 10-12 minutes at 200C or 390F.
Flip halfway. Your hara bhara kebab are done.
Take out and serve hot with any dip of choice or chutney.
For Skillet frying
Take a skillet or non-stick pan. Use little oil and shallow fry on both sides till crispy.
5. Serve hot with ketchup, green chutney or dip of your choice.
Pro Tips:
1. You can cook the spinach by wilting it in a pan and letting its water dry up. Or you can microwave spinach for about 2 minutes and squeeze out the water and use.
2. This is vegan and healthy snack.
3. Using oats makes this recipe gluten free.
4. Add chillies as per taste. You can skip them altogether.
5. If you feel that your mixture feels a bit wet, then add more potatoes and/or oats or semolina to help bind it better.
6. You can also add a whole cashew, almond or walnut on top of each kabab to give it a restaurant feel.
7. While air frying use parchment paper so that your kabab don't stick to the air fryer basket.
