These air fryer butternut squash fries are crispy outside and soft and fluffy inside. Lightly seasoned, we have them as a substitute for French fries or as a side.
Butternut Squash is a delightful fall vegetable. Its sweetness is enhanced by roasting it in the air fryer.
You can use an oven as well.
Try this butternut squash in air fryer with pumpkin spice. Equally delectable.
You may also like: air fryer parsnips, air fryer carrots, roasted pumpkin in air fryer, roasted zucchini in air fryer, air fryer eggplant fries, cheesy broccoli bites, crunchy oyster mushroom and crispy okra.
Tips to Make Butternut Squash Fries in Air fryer
- It is slightly difficult to cut a butternut squash especially if it is large. I end up choosing smaller ones. You can also buy pre-cut fries from the grocery store.
- I used extra virgin olive oil but feel free to use any oil of choice.
- The same applies to seasoning. Use any seasonings of choice. Just salt and pepper are good too. Since the squash is naturally sweet, I don’t use any sweetener.
- Cut the fries to similar-sized pieces. This ensures even cooking. Some overlap is fine in the air fryer.
- Don’t forget to shake the basket every 4 minutes.
- I have used cornstarch for a thin crunchy coating. You can use arrowroot flour for gluten-free option. Or even do away with it if you so like.
- Don’t use too much cornstarch. Just enough to lightly coat the fries. Discard any that drips down.
Stepwise Directions
Peel butternut squash. Cut into same sized fries using a sharp knife.
You may also use pre-cut fries.
Let the fries be dry. Use paper towels to dry them.
Add 2 tsp. cornstarch and toss the fries till each one is lightly coated.
Discard any extra cornstarch that drips down.
You may use a colander for the same.
Add seasonings.
I have used garlic powder, cayenne, pepper and salt.
You may reduce their quantity or skip any that you don’t like.
Even spice mixes can be used. For a fall flavour use pumpkin pie spice mix.
Toss the fries in oil and spices till each one is covered.
Air frying Instructions
Preheat air fryer at 200C or 390F for 5 minutes.
Brush air fryer basket with oil and lay the seasoned butternut squash fries in the basket.
Some overlapping is fine.
Air fry at 200C or 390F for 10-12 minutes till they are crispy outside and cooked inside.
You can pick out one and check.
Ensure that you shake the basket once every 4 minutes.
This is to facilitate even cooking.
Take them out and serve hot with a dip of choice.
You can also serve them as a delicious side.
My son and I polished off the entire batch. It is quite good.
