    Strawberry Mug Cake

    Strawberry mug cake is a really simple and satisfying little dessert for when you are craving something sweet. It is quick and easy to make. I have shared both air fryer and microwave recipes here.

    Sometimes, you just want something warm, sweet, and homemade and also don't want to heat up the oven. These single serve strawberry mugcakes are very handy for get togethers as well.

    Made with self-raising flour and a handful of pantry staples, this mug cake has a soft, fluffy texture with bursts of fresh strawberry in every bite. Also it gets done quickly and tastes just delicious.

    Ingredients

    1. Dry ingredients: Self-raising flour and sugar are used as dry ingredients here. If you don’t have self-raising flour, all-purpose flour with baking powder works. You can use sugar substitute here if you are watching sugar intake. 

    2. Wet ingredients: Vegetable oil and vanilla extract are used here along with almond milk. Any kind of milk works in the recipe. You can also use vegan butter in place of oil if you so prefer.

    3. Strawberries: Fresh strawberries are used in the mug cake. A few sliced one can be used for garnish too. 

    4. Garnish: You can serve with mug cake with dairy free whipped cream or ice cream. I prefer it just plain.

    Instructions

    This recipe is really as easy as it can get. Assemble all the ingredients. Now take an oven safe and microwave safe ceramic mug like the one I have used here.

    Take self-raising flour along with the sugar in the mug. No need to use another dish. Pour in the almond milk, vegetable oil, vanilla extract.

    Mix well till the batter is smooth. Now add in the diced strawberries. That's it. You can add some chunks of chocolate or chocolate chips too if you are in the mood.

    Air Fryer Instructions
    Preheat air fryer to 170C or 340F for three minutes. Place the mug into the air fryer basket.

    Air fry for about 12-15 minutes at 170C or 340F till the mug cake is cooked. I needed 13 minutes. You can do 3-4 mug cakes at one go depending upon the size of your air fryer. Also use wide-mouthed mugs.

    Keep an eye on it during the last few minutes (after 12 minutes). To check if it is done, insert a toothpick in the center. It should come out clean.

    Take out the mug cake. Let it cool for a minute or two before digging in. You can garnish with slivered strawberries and optional whipped cream or ice cream before serving.

    Microwave Instructions
    If you are using the microwave, follow the same steps for mixing the batter in a microwave-safe mug. Once ready, place the mug in the center of the microwave and cook on high for 90 seconds.

    If the cake is not fully cooked, give it another 15 seconds. Cook in instalments of 15 seconds till your strawberry cupcake is done.

    Cool slightly before enjoying. Garnish as needed.

    Expert Tips

    1. If you don’t have self-raising flour, you can use 3 tablespoons of all-purpose flour mixed with ¼ teaspoon of baking powder and a pinch of salt.

    2. Fresh strawberries work best in this recipe, but you can use other berries like blueberries or raspberries as well. If you’re using frozen strawberries, thaw them completely and pat them dry to avoid adding extra moisture.

    3. Air fryer cooking times can vary a little, so start checking your cake at the 8-minute mark to avoid overcooking.

    4. Make sure you only fill your mug halfway with batter, so there is plenty of room for it to rise. Also use wide-mouthed mugs.

    5. You can add chocolate chunks or chips to the mug cake mix. You can also add sprinkles on top to make it look pretty.

    6. If you like your mugcake to be sweeter, add 1.5 tbsp. sugar to your mug cake.
