Quick pickled white onions are so delicious in tacos, wraps, sandwiches or just as a side with any food.
Whether you are a pickle lover like me or just need to add some zesty side, these white pickled onions with apple cider vinegar are perfect for you.
It is such an easy recipe that needs just 5 minutes to come together. Then refrigerate and consume as desired.

Ingredients
1. Onions: I used 2 medium white onions that filled my washed and sterilized jam bottle.
2. Vinegar: I love using apple cider vinegar for pickling. Used half cup here. But white vinegar and red wine vinegar both work well here.
3. Salt and Sugar: Both are added to balance out the tartness from the vinegar. I have used ½ tbsp. each.
4. Water: I use water in double the quantity of vinegar for preparing the pickling liquid.
5. Spices: I loved using mustard seeds, whole peppercorn, garlic cloves, red chilli flakes and any herbs that I have available.
Variations and Substitutions
1. You can swap out white onions for red onions, pearl onions or even green onions or scallions.
2. Change the spices used as per what you like. I have thrown in other veggies like carrot batons and whole green chillies too at other times.
3. Use any vinegar of choice for making your pickled onions.
Serving Suggestions
Pickled white onions are just perfect as a topping to provide a burst of flavour in your favourite tacos, burgers, sandwiches, salads and as sides with your meals.
I always keep a batch in my refrigerator.
Instructions
Assemble all the ingredients together. Then it is simply putting them together.
First, cut the ends of the onions. Remove the peels. Slice them into rings or half moons. Mine were quite potent and I shed a few tears in slicing them.
In a saucepan, combine vinegar, water, sugar and salt. Bring it to a gentle boil till the sugar has dissolved.
Take it off the heat.
In a clean wide mouthed glass jar, add your onion rings along with other spices that you are using.
Top up with pickling liquid. Let it cool down and come to room temperature. Put on the cap and keep in the refrigerator.
You do not require fancy bottles. Your regular jam or any other glass bottles that have been cleaned well and completely dried suffice.
Keep pickled white onions in the fridge for a couple of hours and start consuming them.
They will get more flavourful as pickling time increases.
You can easily store them upto 2 weeks in the fridge.
Expert Tips
1. While making any kind of pickles, ensure utmost hygiene. Wash and thoroughly dry your pickling container.
2. Make sure that the onion is completely submerged by the pickling liquid. This keeps the pickle okay and prevents any fungal growth as time goes by.
3. You can use any spices that you like. Even change up the vinegar for slight variations in taste.
4. Pickling liquid can be reused for marinating meats or in dressings for a tangy kick.
5. You can store these fridge pickles for upto two weeks. At all times ensure that the onion rings are completely submerged by the pickling liquid.
6. The recipe is really easy and anyone can make it. The pickles get their optimum flavour after a day of pickling.
