It is such a quick and healthy recipe that is perfect for newbie cooks or college goers too especially when they are in a rush.

This recipe involves using sliced potatoes and onions, tossing them with a few spices and cooking them in air fryer. Super easy.
You can skip the oil if you are looking for a no-oil recipe.
Ingredients
Potatoes: I have used baby potatoes here. Russet and Yukon Gold work equally well.
Onion: I have used red onion because I love their stronger flavour. White onions work great too. They will be sweeter in taste.
Olive oil: Olive oil tastes great and also give a roasted sheen to the veggies.
Vegetable broth or lemon juice work well in case you are looking to avoid oil.
Seasonings: I have used pepper, garlic powder, oregano and salt here.
You can choose any seasonings or mixes that you enjoy.
Variations
This is a vegan recipe that is dairy and egg free. You can make it zero oil by skipping oil.
If you are feeling indulgent you may add some vegan cheese or regular cheese (for vegetarians) in the last 2 minutes of air frying.
You can add more veggies like peppers, mushrooms and carrots here to have more veggies at one go.
If you eat these, you can air fry sausages or bacon along with the potatoes and onions.
If you enjoy cheese, you can add some grated cheese in the last two minutes of cooking time for a richer taste.
Serving Suggestions
Appetizer: These air fryer onions and potatoes work as a great appetiser.
Top with guacamole, hummus or salsa and some cheese if you like.
Curry: These make for a lovely Indian side dish or curry.
Add some Indian spices like garam masala, ground cumin, ground coriander, turmeric powder while air frying for a tasty Indian sabzi.
Breakfast: They are perfect for breakfast with scrambled eggs and sausages.
Bowl or Wrap: They add flavour and crunch to a delicious bowl or wrap with some grilled protein and mayo.
Side: They work as an excellent side with grilled or air fried main like chicken, beef, shrimp, tofu.
Burger: Serve with a nice burger for a hearty meal.
Storage
These air fryer fried potatoes and onions can be stored in the fridge in an air tight container for 2-3 days.
Air fry to reheat at 180C or 360F for about 4-5 minutes.
They can be frozen as well. Air fry them to reheat and serve.
Instructions
Wash and dry potatoes. Cut them into similar sized cubes about 1”. I leave the skin on for the crunch. It’s a personal choice.
You can peel the skin off too.
Slice your onions.
I cook these vegetables at 180C or 360F. That way they get an even caramelisation on the edges without going overboard.
They also cook evenly.
After chopping them, toss them in olive oil and spices.
You may use lemon juice or aquafaba in place of olive oil for zero-oil recipe to help the spices to adhere.
Your air fryer roasted potatoes and onions will still taste good. They will not have a very fried appearance though.
How to Air fry Potatoes and Onions
Preheat air fryer at 180C or 360F for 5 minutes.
Brush air fryer basket with oil. Place seasoned potatoes and onions in the basket.
I could do 1 lb. or 450 gm. batch at one go.
Some overlapping is fine.
Close air fryer basket. Air fry at 180C or 360F for 12-15 minutes.
Check after 10 minutes to see the doneness and caramelisation.
It will depend upon how thick or thin your pieces are.
Remember to shake the air fryer basket every 5 minutes during air frying cycle for even cooking.
Your air fried potatoes and onions will look nice and crispy. They taste delicious too.
Check for doneness by eating one potato cube.
They will be cooked inside and crispy on the edges.
Take them out. Garnish with chopped parsley and serve hot. Enjoy.
Tips
1. Cut potatoes into 1” cubes. You may leave the skin on or peel it as per your choice. Here, I have left the skin on.
2. Slice onions into thick slices. If they are too thin then they may start burning by the time the potatoes are done.
So keep them slightly thick.
3. Remember to shake the basket once every 5 minutes for even cooking.
4. Leftovers can be stored. Check storage instructions above the recipe card.
5. You can use spices as per your like.
You can use turmeric, cumin, cayenne, Italian seasoning, peri peri seasoning or any other spice mix of choice.
6. If you want the taste to be richer, you could use a tsp. of butter (plant-based or daily towards the end of cooking time and apply all over the veggies.
