Air fryer sweet potato cubes are one of those sides I make on repeat. They are crispy, lightly caramelised on the outside and soft and sweet inside. They are so simple to make and go with just about anything. Honestly, I often end up snacking on them straight out of the basket before they even make it to the table.
The air fryer does a great job here because you get that perfect roasted texture without heating up the whole kitchen. A little oil, a few seasonings and 15 minutes later, you have got the easiest, most delicious sweet potato dish ready to serve.

Ingredient Breakdown
Sweet Potatoes: Go for firm ones with smooth skin. I got these small sweet potatoes at Trader Joe's. Cut them into even cubes so they cook evenly. I peeled them.
Olive Oil: Just enough to help the seasonings stick and give that lovely golden color.
Seasonings: Salt, pepper, garlic powder and paprika are my usual go-tos. I have added some Italian seasoning as well.
Nutritional yeast: I love to sprinkle on everything these days. Gives a cheesy flavor. This time though I skipped it.

Instructions
Peel and cut the sweet potatoes into small, even cubes of about ½ inch. Try to keep them similar in size so they cook evenly. The smaller the cubes are, the lower will be the air frying time.

In a bowl, toss the cubes with olive oil, salt, pepper, garlic powder, paprika and Italian seasoning. Meanwhile, preheat the air fryer to 200C or 400F for 4 minutes.

Spread the seasoned sweet potato cubes in a single layer in the basket.

Cook for 10-12 minutes at 200C or 400F, shaking the basket midway through, until the cubes are golden and slightly crisp on the outside. You may need a minute or two more if your cubes are larger.

Serve warm as a side, or toss them into a salad or grain bowl. These sweet potato cubes are delicious and really need nothing much to do. Give them a try.

Expert Tips
- Cut the cubes evenly so they cook uniformly.
- Don't overcrowd the basket, if needed, cook in batches for the best texture. I can do 1 lb. at one go in my air fryer.
- For a Indian touch to the spices, you can add a pinch of cumin or sprinkle some chaat masala after cooking.
- Leftovers can be stored in the fridge for up to 3 days in air fryer container and reheat in the air fryer before serving. They are the crispiest when fresh though.
- For a sweeter version, add maple syrup and cinnamon to the seasonings.
