These air fryer corn ribs are a fun way to make corn when you want something a little different from regular corn on the cob in air fryer, another favorite of mine. The corn kernels gets nicely crisp, while the inside stays juicy and tender. I like coating it with a simple mix of spices and oil, then finishing it with a squeeze of lime.
They are great as a snack, side dish or something to put out at a get-together as finger food. Yes, you will be surprised with how quickly these are lapped up.The air fryer also makes them much easier than standing over a pan or grill.

Another absolute favorite is crispy corn in air fryer when you just wish to use frozen corn kernels for a satisfying snack.
Ingredient Breakdown
Corn: Use fresh corn on the cob. I find fresh corn easier to cut than old corn. Take out the husk and silk.
Olive oil: A little oil helps the spices stick to the corn and also helps the edges brown nicely in the air fryer.
Paprika, garlic powder, oregano and chilli powder: I use these for flavour and color.
Cilantro and lime: I like adding these at the end as garnish.
Instructions
Remove the husk and silk from the corn on the cob and keep aside.

How to Cut Corn Ribs Safely
This is the biggest step in doing this recipe and creates a fair bit of confusion. I have found it easier to first cut corn on the cob into two parts horizontally. Then prop one-half length side up. The important thing is to have a steady base.
Using a sharp chef's knife, we are going to cut the half vertically down the middle. Ensure knife is pointed downwards and you bang it down once its blade is immersed in the corn. At no time should any part of your hand be below the knife.
One you have two vertical halves, use the same method to further cut them into halves. Hence you will have 8 quarters from one corn on the cob in all. Check the images I have used to understand better.

Add the corn ribs in a bowl. Take olive oil and seasonings in a bowl and mix well. You can use vegan butter in place of olive oil for a richer taste.

Brush the spiced oil all over the corn ribs.

Meanwhile, preheat your air fryer to 400F or 200C for three minutes. Place the corn ribs in the basket in a single layer. Do not overcrowd them. Depending on the size of your air fryer, you may need to cook them in batches.

Air fry at 400F or 200C for about 12 minutes. The edges will be browned and the corn gets tender. Your corn ribs will curl up cutely. If you like them more charred, give them another 2 to 3 minutes.

Transfer the cooked corn ribs to a serving plate. Sprinkle with fresh coriander and lime juice before serving. It is delicious and so easy to make.
Expert Tips
1. Cutting the corn is the trickiest part of this recipe. Use a sharp knife and a stable cutting board. Swift application of pressure helps me cut them in one stroke.
2. My husband really loved them as the corn kernels brown beautifully and taste delicious.
3. For extra heat, I have added chili powder. You can skip as per preference.
4. I love serving these immediately. The edges are at their crispest when they are fresh out of the air fryer. To store leftovers, store in an airtight container in the fridge. Refresh leftovers in the air fryer till heated through.
5. A final squeeze of lime makes the taste even better. You can also garnish with some nutritional yeast or vegan feta for a nutty, cheesy taste.
