This crispy corn appetiser made with fresh or frozen sweet corn is delightfully crispy and tasty. Perfect as a snack. Kids just love this recipe.
I always have some frozen corn in my freezer. I add it to my rice dishes, salads or wraps for a burst of fresh flavour. It is also great as a snack.
You can make butter or olive oil corn in a jiffy on stove top, in microwave or in air fryer. But this crispy corn is another favourite of mine and super easy to do as well.
You may also like: air fryer corn on the cob, air fryer popcorn, Air fryer chickpeas, Air fryer falafel, Air fryer Broccoli, Honey roasted almonds and Air fryer baked potatoes.
Ingredients
Sweet corn: Both fresh or frozen can be used. Frozen can be air fried or soaked in water for a few minutes till reasonably thawed to apply the seasoning.
Seasonings: I use garlic powder, cayenne or paprika, Italian seasoning, pepper, lemon juice and salt along with olive oil. Use cornstarch for the crispy coating.
Garnish: Optional garnish is finely chopped onion and cilantro leaves.
Tips to Make the Best Crispy Corn in air fryer
- Use cornstarch for a nice crunch. I used 2 tbsp. for 1.5 cups of corn. A lot of it sheds off so you aren’t consuming that much.
- I have tried both adding the spices along with cornstarch and then air frying or adding the spices after air frying. Didn’t find any difference in taste.
- Adding chopped onion provides a nice crunch to the crunchy corn.
- This will not keep as the crunch is lost. Best to consume it fresh.
- You can make a zero-oil version by doing away with oil and just using a bit of water in its place. Make sure that the cornstarch coats the corn.
- You can adjust the spices as per taste.
Stepwise Pictures
1. If using frozen corn, immerse in hot water for about 5 minutes. Drain and use.
2. Assemble together the spices, salt and cornstarch along with lemon juice and oil.
3. Add the spices and salt first and mix with the corn.
Then I add cornstarch and mix well to coat.
4. Finally add lemon juice and oil and mix well further.
Air frying Instructions
5. Preheat air fryer at 360F or 180C for 5 minutes.
6. Lay the coated sweet corn in one layer.
Air fry for about 12-14 minutes at 180C or 360F till crunchy. Shake the basket 2-3 times during cooking.
Deep frying
Heat oil in a wok or pan till it is medium hot. Carefully fry the marinated corn pellets for about 1-2 minutes till crispy and done.
Take out and serve hot after garnishing.
7. Take out the crispy corn and toss with some more lemon juice, salt and pepper.
Also add if you some chopped onion and cilantro. Mix well and serve hot. Those in India would love this as Barbeque Nation style crispy corn.
For the Indian touch, garnish with chaat masala, salt, chopped onion, chopped cilantro and some finely chopped chilli.
