Bok choy or pak choy in air fryer has crispy edges and tastes wonderful. It needs just 5 ingredients. Such a healthy and tasty veggie side. Sometimes, I do it to more crispy and the kids loved the chips as well.
Making bok choy in air fryer was on a whim, as I love doing air fried vegetables. I was quite surprised with how lovely it tasted.
Have it cooked as a side or cook it more and you have delicious vegetable chips on hand. Gets done very quickly as well.
Definitely worth trying. You can make it oil free by skipping oil and using either vegetable broth or lemon juice in its place.

What is Bok Choy?
Bok choy is a Chinese cabbage-like vegetable that has a slight bite in taste. It is high in fibre, beta carotene, Vitamin C, A, K and Calcium.
Both the green leaves and the crunchy stalks are edible. The leaves are green and lettuce like.
If you use baby bok choy, then the leaves are shorter.
Tastes really wonderful sautéed, in soups or in a Chinese sauce.
Tips to Make Air Fryer Bok Choy
- Choose fresh green bok choy. Cut off the base. Clean the leaves and stalks well and separate leaves for cooking quickly in the air fryer.
- If using baby bok choy, you can just cut them into halves and use.
- This needs very little seasoning. Just four basic ingredients — olive oil, salt, pepper and chopped garlic. You may use garlic powder in place of chopped garlic.
- Just toss bok choy leaves with the seasoning and put in preheated air fryer basket.
- Air fry till the edges are crispy and bok choy looks cooked but retains a bite. Take out and serve hot.
- You can air fry more till the leaves are nice and charred just like crunchy chips. Eat them as a snack. You can eat the crispy stalk as well.

Clean bok choy well. Make sure that all the grime is washed away.

Preheat air fryer at 390F or 200C for 4 minutes.
Lay bok choy leaves in air fryer. You can allow them to overlap a little.
Air fry for 2-4 minutes at 390F or 200C for bok choy with slightly crispy edges that is cooked.
For charred chips like bok choy, air fry for about 6-7 minutes at 390F or 200C.
Your bok choy is ready. Serve it hot as a vegetable side or enjoy as a healthy snack. Super easy beginner-friendly recipe.
