Air fryer zucchini fries or zucchini sticks is a delicious vegetable side and is ready in minutes. The recipe is so addictively delicious. You will make it again and again. It is kid-approved too.
These zucchini fries are zero oil, are so crunchy outside and perfectly tender inside without being mushy or soggy. I am truly gushing! It is completely vegetarian and vegan friendly.
I do a lot of cooking with air fryer but cooking vegetables in air fryer is a revelation. The veggies are superbly roasted and get very flavourful.
You can try this zucchini in air fryer no breading recipe that is super flavorful and healthy.
These air fryer eggplant fries, cheesy broccoli bites, crunchy oyster mushroom or crispy okra are all delicious way to do vegetables in air fryer.
Variations:
1. Gluten free: To make this recipe gluten free, use gluten-free cornflakes. Check the label of your cornflakes while buying.
2. Vegan: This recipe is vegan by using plant-based yogurt and vegan cheese.
3. Vegetarian: This recipe is naturally vegetarian as it uses no meat.
4. No cornflakes version: Use regular breadcrumbs, Panko or even oat flour in place of cornflakes.
Stepwise Pictures
1. Wash and dry the zucchinis. Choose tender ones. Cut off the edges on both sides.
Cut them into batons, sticks or fries of equal thickness (about ½ inch). See the video for a better understanding.
2. Take ground cornflakes (or breadcrumbs), grated cheese/vegan cheese along with spices in a bowl and mix well. Take this in a shallow plate.
3. Take beaten or whipped Greek yogurt or plant-based yogurt (for dairy free) and dip all the batons to evenly coat.
You could use Indian curd as well. Just make sure it is thick.
4. Dunk yogurt-coated fries into the coating till they are well covered.
5. Preheat air fryer at 390F or 200C for 4 minutes.
Lightly spray or brush oil in the air fryer basket. Lay the coated zucchini fries or sticks in one layer in the basket.
6. Air fry for about 7-8 minutes at 200C till the coating is crunchy and the fries are done.
Repeat with the other batches. I did 3 batches for 1 lb. of zucchini.
You could use perforated parchment paper in the air fryer basket for easier clean up. The fries don’t stick to the basket.
The fries are ready. Have them hot with dip, ketchup or chutney of your choice.
Pro Tips:
1. Make the recipe dairy free by using plant-based yogurt and vegan cheese in the recipe.
2. The coating is super crunchy and deliciously cheesy. You could use breadcrumbs in place of cornflakes.
3. You could add flaxseed and sesame seed to the coating mix for more crunch and nutrition.
4. This recipe can be used with eggplant for making fries.
5. This recipe is zero oil and turns out wonderful. Yogurt provides the binding for the coating.
6. Grind the cornflakes to a fine powder before using for the coating. If using breadcrumbs, use the regular kind.
7. You can add other spices or herbs like chopped parsley to the coating mix.
8. Serve with mayo, chipotle mayo, ketchup or mint chutney.
