    Vrat Wale Aloo | Falahari Aloo Navratri Special (Step-by-step Recipe)

    This vrat ke aloo recipe is a delicious potato curry recipe that is especially popular to be eaten during fasting for Navratri. But even otherwise, it is one of my favourite potato curries. It is really simple to make and hence my go-to recipe when I want something quick and easy for lunch. Just pair with kuttu ki poori or paratha and it is a favourite among vrat or upvas recipes.

    Here is my simple vrat wale aloo Navratri special recipe:

    Step-by-step Recipe for vrat ke aloo:

    Heat ghee in a pan.

    Add cumin seeds and allow to sputter. Takes about a minute.Now add grated ginger and chopped green chilli and fry for 30 seconds.

    Add boiled and cubed potatoes and fry for about 2 minutes on low flame.

    Now add red chilli powder (optional), cumin powder and pink salt and mix well.

    Now add half cup whisked curd and mix well.

    Cook on low flame for about 3-4 minutes. Your gravy will reduce quite a bit. Taste and adjust seasoning.

    Garnish with finely chopped cilantro and serve hot. Your tasty vrat ke aloo is ready to serve.

    Pro Tips

    1. Toasting your boiled potatoes in ghee make them super tasty.
    2. If you want more curry, just add some more water or whisked curd, add more seasoning and pink salt.
    3. In case, you want to have this recipe without fasting, add normal salt. You may add turmeric powder and garam masala as well.
    4. You can mash potatoes using the back of the ladle to make your gravy thicker.
    5. Serve it hot with rotis or rice.
    6. Every family may have slightly different rules for what they might eat during Navratri. Do check and modify any ingredient that you don't consume.

    • Pressure cooker for boiling potatoes

    Ingredients
     

    • 2 cup potatoes boiled and chopped
    • 1 tsp. cumin seeds
    • 1 green chilli finely chopped
    • 1 tsp. ghee or clarified butter
    • 1 tsp. red chilli powder optional
    • ½ tsp. roasted cumin powder
    • 1 tsp. cilantro or coriander leaves finely chopped
    • ½ cup curd or yoghurt
    • 1 tsp. ginger grated
    • Pink salt or black salt to taste

        Yes, it can. Hence you whip the curd and add it on a low flame then cook it on a low flame.
