Simple is sometimes perfect and all that you need. These air fryer carrots and potatoes are a simple and easy to do vegetable side dish.
When you are craving something quick and healthy, this vegetable side works well.
They are such a good side to a chicken dinner or a vegetarian meal.
Potatoes and carrots are individually my favourites. I have made potatoes in many forms in the air fryer.
They turn out spectacular with crispy skin outside and fluffy potatoes inside.
From breakfast potatoes, smashed potatoes, baby potatoes to French fries, frozen French fries, potato chips, these are delightful in the air fryer.
Air fryer carrots and air fryer potatoes and onions are also so very tasty too. So why not combine these two favourites of mine?
The recipe is as simple as cutting potatoes and carrots into similar sized pieces, applying some spices on them and air frying.
You can skip the oil if you wish to.
Ingredients
Potatoes: You may use baby potatoes or large ones. Russet and Yukon Gold work well.
Carrots: Baby carrots can be used in this recipe. Or you can cut large carrot into smaller pieces.
Olive oil: Olive oil helps in seasonings to adhere and also give a nice roasted shiny appearance to the veggies.
You can skip the oil and use veggie broth or lemon juice in its place for a no-oil recipe.
Seasonings: I have used onion flakes, garlic powder, pepper, paprika and salt in this recipe.
Feel free to use seasonings of your choice. You can also use seasoning mixes like Old Bay seasoning, Cajun spice mix etc.
Variations
This is a vegan dish that contains no dairy.
If you are feeling indulgent you may add some vegan cheese or regular cheese (for vegetarians) in the last 2 minutes of air frying.
You can make this recipe sweeter by adding some brown sugar, honey or maple syrup to it with the seasonings.
If you eat sausages, you can air fry some cut sausages along with potatoes and carrots.
You may also add other vegetables like broccoli, cauliflower etc. to make a more substantial stir fry.
Serving Suggestions
Salad: These potatoes and carrots work really well in salads. Add some beans and dressing for a hearty salad meal.
Side: They work as an excellent side with grilled or air fried main like chicken, beef, shrimp, tofu.
Bowl: They work very well with a protein and a light salad with pickles in a bowl.
Burger: Serve with a hearty burger for a nice filling meal.
Storage
You can store these air fried potatoes and carrots in the fridge in an air tight container for 2 days.
Air fry to reheat at 180C or 360F for about 4-5 minutes.
You can also freeze them. Later air fry them to reheat and serve.
Instructions
Cut your potatoes and carrots in similar shapes. It does not have to be perfect but close to each other for even cooking.
I leave the skin on the potatoes on so that they crisp up nicely.
I have seen that cooking at 180C or 360F gives a nice caramelisation without charring the vegetables.
I have peeled the carrots here.
After cutting them in similar shape, toss them in olive oil with the seasonings mentioned.
If you prefer zero oil, then skip the oil in the recipe. Lemon juice helps the spices to adhere to potatoes and carrots.
You can vary the spices depending upon your individual taste.
Preheat air fryer at 180C or 360F for 5 minutes.
Brush air fryer basket with oil and lay the tossed potatoes and carrots in air fryer basket.
It is okay if there is overlapping.
I do my entire 1 lb. at one go.
Close air fryer basket. Air fry at 180C or 360F for about 10 minutes. Shake the basket once or twice during the air frying cycle.
Your potatoes and carrots should have brown edges and will look wrinkly.
You can pick one and eat. They should be cooked and fluffy inside but not mushy.
Take out roasted air fryer potatoes and carrots and garnish with some chopped cilantro and serve hot.
Tips
1. Cut potatoes and carrots of similar size. That way they cook evenly. You can also add sliced onions to these.
2. This is a fuss-free recipe that comes out delicious in the air fryer.
3. Do not allow too much overlap.
4. Shake the basket twice in the air frying time to enable even browning.
5. You can store the leftovers in the fridge. Check the storage instructions mentioned above the recipe.
6. You can vary the spices as per taste.
7. If you love butter or ghee (plant-based or dairy), you can use that in place of olive oil.
