These air fryer potato cakes or potato pancakes can be made with leftover mashed potatoes. They are so delicious and super easy to make. Perfect potato side that your family will love.
These mashed potato cakes or pancakes are very convenient to do in air fryer. I can fit 8-10 of them at one go.
My kids and husband just love them. Great way to use up leftover mashed potatoes or make quick mashed potatoes to make these.

Serving Suggestions
- I serve these with sour cream/yogurt dip/ranch dressing. Use vegan dips alternatives for vegans.
- You can also serve these with chipotle mayo or a hot sauce of choice.
- These make for a perfect side with any grilled protein and salad.
Storage Instructions
- These are best had fresh as they do tend to get softer if kept. They will still be food for up to 5 days in the fridge. Reheat before serving.
- I haven’t frozen them till now but I think they should be fine once frozen.
Variations
- This recipe is already vegetarian. Use vegan cheese in place of regular cheese to make it vegan.
- You can also add bacon bits to your mashed potatoes if you eat bacon and enjoy it.
- In place of Panko or breadcrumbs, you could use chickpea flour or even semolina for a nice coating. You can also use flour and breadcrumbs half and half.
- Serve with sour cream or dip of choice.
What if I don’t have Mashed Potatoes at Hand?
You can make these with fresh mashed potatoes too but your mashed potatoes must be cold to hold shape.
I normally use boiled refrigerated potatoes, mash them, mix with seasonings and cheese and then proceed to make the balls or cakes.

If using leftover mashed potatoes, chill before using so that they are cold and can be shaped into patties. Add sliced green onion to it. Then form potato patties.
For fresh potatoes:
Use boiled potatoes and mash them using a potato masher. Add grated cheese/vegan cheese, sliced green onion, salt and pepper and mix well to incorporate.
Using your hands form round patties or pancakes.
You could also make balls if you like.
For breading
Now press the patties into breadcrumbs to cover all sides evenly. Repeat for all patties. Keep aside.
Put in the freezer for 10 minutes to hold shape.
Air fryer Instructions
Preheat air fryer at 390F or 200C for 5 minutes.
Lay mashed potato cakes in air fryer basket.
Air fry at 390F or 200C for about 10 minutes till the outside is golden brown and crispy.
You may flip the patties midway. These potato pancakes are fluffy and soft inside while being crispy outside.
Baking Instructions
Preheat oven at 380F or 160C. Place potato pancakes in a baking tray lined with parchment paper.
Bake for about 20-15 minutes till browned evenly on both sides. Do remember to flip the pancakes at 10 minutes.
Serve hot with sour cream/vegan sour cream or dip of choice. Your delicious mashed potato pancakes or cakes are ready to serve. Enjoy!
