    Avocado egg in air fryer are a perfect keto breakfast. Creamy avocado with richness of soft yolk is a tasty combination.

    So easy to make as well.

    It is perfect as a low carb breakfast or pair with toast if you so like.

    Eggs really take to the air fryer in a nice way. 

    You may like making boiled eggs in air fryer and air fryer omelette.  making air fryer frittata, air fryer omelette, air fryer egg bites.

    2. Healthy: This is the perfect keto breakfast and has the goodness of avocados and eggs. 

    It has protein, healthy fats, and essential nutrients.

    3. Versatile: Change the toppings or seasonings as per your wish.

    Ingredients

    1. Avocados: Choose ripe but firm avocados. They should not be too mushy.

    2. Eggs: Use 1 egg per each avocado half.

    3. Seasoning: I love using just salt and pepper. But chilli flakes are good too.

    4. Optional garnishes: You can use chopped chives or green onions. Some crumbled feta or cheese is good too.

    Variations and Substitutions

    1. Vegan version: For vegan version, you can skip egg and use tofu scramble or a chickpea flour

    2. Spices: You can use paprika or chilli flakes here.

    3. Cheese: You can use shredded parmesan, cheddar or processed cheese to top up at the end.

    Serving Suggestions

    1. With Toast: Serve avocado eggs with a side of toast.

    2. Salad: Serve alongside a fresh salad for a tasty breakfast.

    3. Bacon: Crispy bacon pairs very well with avocado eggs. Perfect for those who like meat.

    Instructions

    Take an avocado and slice it into half. Remove the pit.

    If your avocado is small, you can scoop out some more flesh.

    You must have a big enough cavity to fit one egg.

    Or you can just add the yolk with little white as I have done here.

    Season the avocado with salt, pepper and red chilli flakes if using.

    Carefully crack an egg into the hollow so that it fits well and the yolk does not break.

    Preheat air fryer at 380F or 160C for 5 minutes.

    Carefully place avocado halves inside the air fryer basket.

    Be careful that they don’t tip over. 

    If your avocado is very round, you can slightly slice off the bottom to make it stable enough to stand.

    Air fry for about 8-10 minutes at 380F or 160C till the white is cooked and the yolk is runny.

    If you like fully cooked yolk (which is what I like) then cook it maybe a minute more.

    Sprinkle with some salt and pepper along with chilli flakes or chives as per your preference.

    Storage Tips

    This avocado egg is best consumed fresh.

    In case you have leftovers, you can reheat for 2-3 minutes in the air fryer and consume.

    Expert Tips

    Choose a firm but ripe avocado. A mushy one will get way too mushy on heating.

    Use room temperature eggs for even cooking. 

    Do keep an eye on the temperature as it will vary depending upon the size of the avocado and the model of your air fryer.

    Serve it immediately for best taste.

    FAQs

    1. Can I make these in advance?

    It is best not to cook them and store in advance. This is because eggs will get overcooked and avocado will get too mushy on recooking.

    2. What is the egg does not fit into avocado cavity?

    For smaller avocados, it is best to scoop out extra flesh so that the egg fits into the cavity. Or you could just do the yolk in the cavity.
