Ingredients
Mushrooms: I have used 8 oz or 220 gm. button mushrooms here.
Onion: one large red or white onion is perfect for this recipe. It is sliced and used.
Extra Virgin Olive Oil: I love its flavour, and it helps the mushrooms and onions from drying out.
Seasonings: Salt, pepper and garlic powder are the basic seasoning used for this recipe.
Variations and Substitutions
Mushrooms: You can use baby bellas, portobello, cremini or button mushrooms here.
Vegetables: Other vegetables like peppers, zucchini, asparagus can be added along with mushrooms and onions. Potatoes can also be added.
Herbs: Add finely chopped cilantro or parsley for garnish at the end if you like.
Spices: You can use any pre-made spice mixes like Old Bay seasoning, Cajun seasoning, BBQ seasoning mix here.
Cheesy: Use nutritional yeast or cheese at the end for a cheesy touch.
Oil: You can use coconut oil. Also, you can skip oil and use lemon juice in its place to help spices to adhere.
Instructions
Clean mushrooms thoroughly by using a damp towel and wiping them.
Cut them into halves or quarters (if they are large). I have used button mushrooms here.
Don’t slice them because they shrink a lot after cooking and will become very tiny if sliced.
Take one onion and slice it slightly thickly. This is so that it does not start burning in the time it takes to cook the mushroom.
We want the onions to turn crispy around the edges.
Assemble extra virgin olive oil, salt, pepper and garlic powder.
Mix together chopped mushrooms and onion slices.
Add oil and spices and ensure that everything is well coated.
Spread them out in air fryer basket with minimal overlapping.
For this recipe, I have not preheated the air fryer.
Air fry at 200C or 390F for about 10-12 minutes till mushroom are cooked and onions are nicely roasted.
Shake the basket midway for even cooking.
Keep an eye on them after 10 minutes.
The time may vary slightly depending upon the size of your chopped veggies and the model of your air fryer.
Remove the air fryer basket and serve immediately.
