This is an easy and economical way to make almond milk at home. It is perfect for your tea, coffee and desserts.
When I started eating plant-based food, one of the struggles was sourcing good quality plant-based milk.
I needed it for my tea and coffee, desserts, vegan curd, even savoury recipes that called for milk.
This almond milk recipe came to my rescue many times.

Yes, you can buy almond milk off the shelves, but it's exorbitantly expensive.
If this is something you are consuming on a regular basis then the cost pinches.
Also, it has added preservatives and chemicals that one may wish to avoid.
The homemade almond milk was quite refreshing and had a faint almond taste. I could just have a glass of it without any additive.
It is also super easy to make at home and when refrigerated lasts for 2-3 days. You can also make flavoured milk with it.
You can also froth almond milk for your coffee. I love it in coffee being a coffee lover.
It is much lower in both calories and fat than regular milk while being high in Calcium and protein.
This is my recipe of homemade almond milk:

1. Take 1 cup of almonds and soak them in water for 4-6 hours or overnight.
2. Drain the water. Wash the almonds once.
3. Then blend together the soaked almonds along with 2 dates, 1 pinch salt, 1 tsp. vanilla essence (optional)and 3 cups water till it is well blended.
4. Using a muslin cloth or cheese cloth, sieve the almond milk through. Squeeze the cloth tightly till you have drained all the milk.
5. This almond milk smells and tastes faintly of almonds. You should get about a litre of almond milk using this recipe.
6. Enjoy this refreshing almond milk.
Pro-Tips
1. You can make thicker milk by using less water for dilution.⠀
2. Drink it as it is or use it in your tea and coffee.
3. Dates are used to give it a pleasant sweetness. You can exclude them if you like.
4. Don't throw away the sieved almond meal. I used it in my roti dough. You can also use it thicken gravies or bake it and use it on top of your cereals or in your cookies.

Thanks Shilpa. The almond milk tastes quite nice, faintly smells and tastes of almond. The tea has a very faint smell of almond. One has to adjust the proportions so that tea taste is predominant. Yes, one could heat the almond milk though not vigourously boil.

Happy New Year Rachna. Such a fantastic recipe, this. I've always wanted to make this separately. Thanks for this simple recipe. I don't like to give my little one the store bought almond milk though it is healthy. The milk would help me and her and the dough would be great for my hubby's diet. Happy New Year, Jayanthy. Glad you liked the recipe. Yes, you can heat almond milk but don't vigourously boil it. Then add to your tea or coffee as needed. The taste is a bit different from dairy milk hence expect a little getting used to. Loved it in muesli or even as a beverage. My son mixed cocoa powder and love chocolate almond milk.

This sounds like a simple one. My problem is nuts. I can't have nuts leave apart this milk. So when I went vegan i had to go to soy milk and that was hard 😉 You make recipes sound so easy, Rachna!
