These chilli cheese toast are super easy to put together and are the perfect snack or appetiser. So easy to make in large batches, and kids love them.
I have been having these chili cheese toast since childhood. It’s something which even kids can make. But be sure to supervise them if they are younger.
I remember my mum doing these in our newly acquired OTG while we waited patiently to eat. They are filling too with cheesy goodness so even better.
I make them with any bread available at home. To make them healthier use whole grain or multi grain bread.
You can make them on a skillet or in the air fryer/oven. Instructions for each is provided.
You may also like: Bread Pakora, Onion Pakoda, masala peanuts, Cheesy Broccoli.
Ingredients
Bread slices: You can use any bread that you like, from regular white bread to multi grain or even artisan breads. I normally leave the crust. But feel free to remove it if you so like.
Cheese: Since this is a cheesy bread, cheese is an essential ingredient here. Use grated parmesan or mozzarella. Processed cheese works too. For dairy free version use plant-based cheeses.
Chilli: Finely chopped green chillies or jalapeños provide it a spicy kick. Use as per your heat tolerance.
Vegetables: I have always made this with green peppers or capsicum. Their crunch and slightly sharp taste go really well. Also finely chopped onions work well. You can also use finely chopped mushrooms or tomatoes. Basically any vegetable that will not require too much cooking time and tastes good when crunchy.
Spices: Just salt and pepper tastes good here. I have also added some Italian seasoning and chopped garlic here. You can use chilli flakes, dried oregano in place of Italian seasoning or some chopped parsley here.
Variations
This is a vegetarian and vegan recipe. All you need is vegan cheese in place of vegetarian cheese to make it dairy free.
If you don’t like green chillies, feel free to use chilli flakes in their place.
Any vegetables can be used also with green peppers or capsicum. You may use boiled corn, chopped tomatoes, olives, grated carrot too.
Serving suggestions
I love to just have these with chai or masala tea.
You can serve these with a spicy mayo or even ketchup.
These chilli cheese garlic toast are really filling on their own and a perfect snack.
Tips
- You can use any bread of choice. Even artisan ones are good.
- You can’t reduce the cheese here. Parmesan tastes the best but processed works well too.
- I feel that just green peppers and onion work well. But sliced mushroom taste good too.
- This recipe is perfect as an appetiser or evening snack.
- This does not store well and should preferably be had hot off the stove. You can reheat in air fryer for 2-3 minutes at 350F or 180C if you have leftovers.
- Since cheese is already salty, I did not need extra salt.
Instructions with Pictures
Take slices of wholewheat or multigrain bread.
In a bowl mix together grated cheese/vegan cheese, salt, pepper, Italian seasoning, chopped garlic, chopped green chillies or jalapeños, finely chopped green pepper and onion.
Place enough of this cheesy mixture on the slice of bread and keep aside.
Repeat for all slices except when you are doing on stove top.
On stove top
Heat a cast iron pan or tawa.
Lightly brush one slice with butter/vegan butter and on low-medium heat lightly toast it.
Flip it and top with cheesy mixture.
Cover with a transparent lid.
Cook on low flame till the cheese melts.
Don’t cook on medium flame or for too long else your bread slice may get charred.
Now remove and serve hot.
In Air fryer
Preheat air fryer at 180 C or 350F for 4 minutes.
Now place the slices with cheesy mixture on top in the air fryer basket.
I could fit 3 slices at one go.
Close the air fryer and air fry for about 4-6 minutes at 350F or 180C till the cheese has melted and browned and the bread is toasted.
Remove them and serve hot.
In oven
You can also bake these toast in oven.
In a preheated oven at 350F or 180C place slices with cheesy mixture on top.
Bake for about 10-12 minutes till the cheese melts and the bread is toasty. Enjoy.

Each toast has about 200 Calories and has 13 gm. protein. It has 8 gm. fat and 16 gm. carbs. It is good for children and adults if fat and carbs are not a concern for them.
2. How do you make cheese on toast without a grill?
You can easily use an air fryer, oven or stove top for the same.
