I love how uniformly crispy and brown the bread gets while the cheese is perfectly melty. My kind of sandwich!
Ingredients
1. Bread: Use 2 slices of bread for one sandwich. I have used wholegrain bread here but really anything works.
2. Tomato: I have used a few tomato slices.
3. Cheese: I have used both cheese slice and diced cheese which were a mix of mozzarella and cheddar. Swiss or provolone work well too.
4. Butter: I brush bread on the outer side for good browning.
5. Seasoning: I have used a bit of spicy peri peri seasoning. But salt and pepper or Italian seasoning work well too.
Variations and Substitutions
1. Bread: Use sourdough, white bread, wholewheat, multigrain or any kind of bread you have at hand.
2. Add meat: Slices of ham, turkey, cooked bacon or even pulled chicken works.
3. Vegetables: Add roasted onion, bell pepper, roasted or even avocado.
4. Plant-based: Use vegan cheese slices and vegan butter in the sandwich.
5. Mayo: You can use both butter and mayo for buttering the bread. Or you can use one of them. They make the bread nice and golden brown.
Serving Suggestions
This air fryer tomato melt sandwich is frankly so good as it is or serve it with a side of omelette or scrambled eggs.
You can also serve this air fryer sandwich melt with a cup of hot soup for a tasty meal.
I have paired this with iced tea or lemonade, and it actually tastes pretty good.
Instructions
The recipe just requires assembling all the ingredients together.
Slice tomato finely into thin slices. Take 1-2 slices of cheese. Also take some melty shredded cheese about 2 tbsp.
Take 2 slices of bread on a clean surface. Butter the bread slices either both ways or only the top side. If using mayo, spread it on the inside of the bread slices.
Sprinkle diced cheese all over one slice. Place tomato slices on top and sprinkle the seasoning you are using to season the tomatoes.
Top with cheese slices. You could also use more cheese slices as per liking.
Then top with the other bread slice making sure that the buttered side faces the top.
Using a couple of toothpicks, secure the sandwich. This is important so that the sandwich stays in place and the bread slices do not fly up to the coil.
While you are doing this, preheat air fryer at 360F or 180C for 5 minutes. Place the assembled tomato sandwich in the air fryer basket.
Air fry at 360F or 180C for 4 minutes. Your bread slice will turn brown. Flip it and air fry at 360F or 180C for a further 4 minutes till the other side is also browned.
Take out the sandwich carefully form the air fryer basket so that you don’t burn yourself.
Cut it into half and enjoy the crispy bread with a melting gooey goodness inside.

Expert Tips
1. Keep an eye on the air frying time as it may vary a bit depending upon your air fryer model and the type of bread you are using. We don’t want the bread to scorch.
2. Use as much cheese as you like. I use 1 slice of cheese and about ¼ cup of melty diced cheese. I use 2 slices of cheese when making it for my teen.
3. Adjust the fillings as per your liking. Try the suggestions shared in variations and suggestion.
4. Remember to use toothpicks to secure your sandwich. It gets easier to flip and handle and also stays intact.
5. It is important to flip and cook the sandwich so that it gets evenly browned on both sides.
6. This sandwich is best had hot. However, if you need to store it, you can in an air tight container. Then air fry for a couple of minutes to heat it through. Don’t cook more or the bread slices may burn.
