Air fryer Aloo Gobi or roasted potatoes and cauliflower done Indian style is a comforting side. Air fryer version makes it easy and almost supervision free.
This side dish is a favourite in my home and is made practically every week.
We love to have it with dal and rotis along with a salad. It is vegan, healthy and delicious. Pure bliss!
You will also love aloo tamatar, palak aloo, Dahi ke Aloo, Garlic Roasted potatoes, Aloo Methi, Aloo Matar, Dum Aloo, Vrat wale aloo and Jeera aloo.
What is Aloo Gobi?
Aloo Gobi is a delicious Indian vegetable side dish. It is a cauliflower and potato stir fry with onion, ginger and garlic along with tomatoes and spices.
It is comforting and so delicious. Perfect for a vegan or vegetarian meal.
Ingredients
Cauliflower: A medium sized cauliflower (about 1 lb. or 500 gm.) is used.
Potatoes: 1 large potato cut into cubes is used.
Onion: 1 sliced onion is used in this recipe
Ginger Garlic Minced: I have used 1 tsp. of ginger garlic paste in this recipe..
Tomato puree: I have used ¼ cup tomato puree.
Spices: Turmeric powder, ground coriander, red chilli powder or cayenne and garam masala are used here.
Oil: 1.5 tablespoon is used here. I used cold pressed mustard oil. But olive oil works well too.
Salt to taste or about ½ tsp. is used.
Variations and Substitutions
1. This is an Indian style roasted cauliflower and potatoes recipe hence Indian spices are used.
Feel free to adjust the spices to your taste.
I would suggest using only salt and pepper along with turmeric powder for a lovely golden color in case you don’t wish to use other spices.
2. You can skip tomato puree too but it does add to the taste.
3. Adjust cayenne as per taste or use paprika in its place.
4. You can use cold pressed mustard oil for authentic Indian taste.
5. In case you don’t have ginger garlic paste, you can use minced ginger and garlic.
Serving Suggestions
Aloo Gobhi pairs very well with rotis, parathas or naan.
It is a wonderful side with tadka dal, rice and salad too.
You can have it as a nice vegetable side.
Instructions
Cut the cauliflower into florets. Keep the florets small so that they cook faster.
I also peel and chop the stalk and use. You can use as per your like.
This is a medium sized cauliflower about 1 lb. or 500 gm. In weight.
Then peel and cut 2 potatoes in small cubes and keep aside.
Slice one red onion. Mince ginger and garlic in equal quantities. Mix them and use 1 tsp.
In a large bowl, take cauliflower florets, cubed potatoes and sliced onion.
Add ginger garlic paste or minced, ½ of the oil and salt.
Mix everything well so that all the veggies are coated.
Meanwhile preheat air fryer at 360F or 180C for 5 minutes.
Lay potatoes and cauliflower with sliced onion tossed with oil and spices in one layer in the air fryer basket.
Air fry at 360F or 180C for about 18 minutes.
Keep shaking the basket once every few minutes for even cooking. You will find that the veggies start shrinking a bit.
Mix together tomato puree along with the other spices like garam masala, ground coriander, cayenne or paprika and the rest of the oil.
Spoon it over the almost roasted potatoes and cauliflower.
Mix well so that the entire aloo gobhi is coated well.
Place the air fryer basket back into the air fryer.
Air fry at 360F or 180C for about 4-5 minutes more till your cauliflower and potatoes are well cooked.
The edges get crispy and browned.
I pick out one cauliflower floret and one potato cube and check for doneness.
If not yet done, I air fry for a minute more.
Your aloo gobhi or roasted cauliflower and potatoes Indian style are done.
Take it out in a plate and garnish with chopped cilantro and serve hot.
Expert Tips
1. Cut cauliflower and potato in similar and small sizes. This is very important for even cooking.
2. Adjust the seasonings as per your taste. You can adjust the spices based on what you like. The veggies still taste great.
3. If your cauliflower florets are too large, you can microwave them for a minute or two so that they are slightly precooked before you air fry them.
4. You can skip tomato puree but it does give the veggies a nice tang.
5. Keep shaking the basket a few times for even cooking.
6. This is a vegan recipe. You can add other veggies like broccoli or carrots here as well.
Storage Instructions
You can store this aloo gobi in the fridge in an air tight container for upto 2 days. Reheat and serve.
You can also freeze this aloo gobi for upto a couple of months,
Air fry to reheat and serve.
FAQ
1. Can I use frozen cauliflower?
Yes, frozen cauliflower can be used but then potato cubes will need to be frozen as well. Otherwise, their air frying times will vary and the dish will not work out.
2. Can I skip onion?
Yes, you can. They do turn crispy and sweet on cooking and add to the taste of the dish.
3. Can I skip oil?
You can and use vegetable broth in its place. Your veggies will look duller and a bit shrivelled after cooking.
