    Instant Green Chilli Pickle | Hari Mirch ka Achaar

    A friend of mine had a bag full of chillies from her farm. Seeing them, I wanted to make this instant green chilli pickle or hari mirch ka achaar. Since it is not elaborate in preparation or requires too much time, I was game to make it right away.

    This is a really simple pickle recipe that even a novice can make. It is ready in days and can be consumed with any meal to enhance its taste. Since it is so simple to make, I would urge you to give it a try. Mostly made with chillies that are not hot, it is flavourful.

    Here is the simple recipe of instant green chilli pickle or hari mirch ka achaar:

    green chilli pickle

    Prep Time 15 minutes 

    Ingredients

    2 cup green chillies slit or chopped

    ½ cup yellow mustard seeds

    2 tbsp. salt

    1 tbsp. black salt

    1 tsp. turmeric powder

    Juice of 3 lemons

    1 tbsp. cayenne or red chilli powder

    ½ cup mustard oil

    Instructions

    1. Wash and dry the chillies.
    2. Slit them into halves or chop them into bite-sized pieces and keep aside.
    3. In a bowl, mix the salt, turmeric powder, cayenne and crushed mustard seeds along with lemon juice.
    4. Add this to the chillies.
    5. Heat the oil (if using mustard oil). Let it smoke and then add to the chillies-spice mix.
    6. Let it cool down completely.
    7. Now take a sterilized glass bottle and fill the chillies with the spice mix in it.
    8. You can keep it in the sun for 3 days or in a warm place.
    9. You can start eating the pickle after 3 days.
    10. It tastes quite good within a couple of days when the mustard has matured and lent a tart taste to the chillies.

    Pro Tips

    1. Use the thin green chillies preferably the mild or medium spicy ones.

    2. You can use any vegetable oil but mustard oil adds more flavour.

    3. The chilly gets mellowed in taste as the pickling happens.

    4. Have it as a side to your parathas or meals.

    5. Adjust the quantity of salt as per your taste.

    6. You can skip the cayenne if you like.

    Your hari mirch ka achaar is ready to eat.

      WIll make this pickle as soon as the one at home gets over. We too make such an instant chilli pickle, but instead of using mustard oil, we use the one we have at home – groundnut oil.

      I definitely need to try this. P lives his green chillies. He cannot make even a simple Egg single fry without adding at least two chillies on it. Meh. Thanks a lot for this recipe. Happy new year, Mam. And congrats again for the indi award.

      Green Chilly is a favourite of my husband’s ? He can eat it raw, in pickle form, any way possible! This one looks delicious, Rachna! Just the colour of the chillies are so tempting! I can have it provided I am having curd rice.

      I know so many who get scared when they see green chilly in the title of a dish because they assume its gonna be a very spicy hot dish… whereas anyone who has had a green chilly pickle knows what a lovely flavour it imparts to a meal.
