These air fryer roasted beets surprised me with how good they were. Slightly crispy on the outside, they had a lovely earthy sweet taste on the inside from the roasting.
Much quicker to roast air fryer beet wedges in air fryer than to bake them. I also make more of store in the fridge to use later in salads or have as a side.

Ingredients
Beets: These are the star of this dish. Use good quality beets.
Oil: I have used olive oil but really any oil works here.
Seasoning: Just plain salt and pepper is what I like to use when roasting beets as they really bring out the beautiful earthy flavour of the beets.

I love to have them just like that as a snack or a side. They are so delicious on their own and don’t really need any other dressing or dip.
You can also add them to a fresh salad for an earthy healthy addition.
You can make a pretty pink beet hummus by blending roasted beets with chickpeas, tahini, lemon juice and olive oil for a delightful dip.

Take nice beets that are fresh. I trim the top and bottom and peel them nicely. Yes, they stain your hands so once you are done cutting them, wash everything well.
I normally cut them in thickish wedges like ⅛ths. Cut them uniformly so that they will cook evenly. You can also cut them into cubes if you so prefer.
Dry them and take in a bowl. Then just toss with salt, pepper and olive oil to coat well.
Preheat air fryer at 390F or 200C for 5 minutes. Place seasoned beet wedges in one layer without overlap.
Air fry at 390F or 200C for 15- 18 minutes till the beets are nicely cooked and are slightly crispy outside.
Take them out and serve them right away.
Expert Tips
1. This is a really simple recipe and does not need too many tips or tricks. Just cut the beetroot wedges or cubes uniformly.
2. Do not crowd the air fryer basket so that the beets roast nicely.
3. Use a fork to check the doneness of the beets. Beets should be fork tender before you take them out.
4. Add lemon juice or balsamic vinegar to the beets for a tangy taste.
5. You can roast whole beets as well but they take much longer in the air fryer. This way is quicker.
6. Storage Instructions: You can make large batches of roasted beets and keep them in an air tight container in the fridge for up to 5 days. I do that and use them in dips and salads. You can also freeze them for upto a couple of months.
