    Arbi Recipe for Vrat | Arbi Fry

    Arbi or Colocasia is a slightly tricky vegetable to cook. If you don't cook it well enough, it leaves a pins and needles sensation in your mouth which is not nice at all. The best way to cook this vegetable is to boil it first so that it is well cooked and then temper it with spices or make it into a curry. The recipe that I have shared is among the easiest arbi recipes.

    So this Arbi ki sabzi recipe is super simple to make.  It is perfect with rotis and is also a great arbi recipe for vrat during festivals like Janmashtami, Dasshera, Navratri and so on.

    Here is my arbi ki sabji recipe:

    Prep Time 30 minutes

    Cook Time 10 minutes

    Total Time 40 minutes

    Servings 4 people

    Calories 203 kcal

    Ingredients

    2 cups arbi or Colocasia

    For tempering

    2 tsp. ghee

    1 tsp. cumin seeds

    1 pinch asafoetida or hing

    Spices

    1 tbsp. Red Chilli powder optional

    ½ tsp. Turmeric Powder

    1 tsp. Coriander Powder

    1 tsp. Cumin Powder

    1 tbsp. dry mango powder or lemon juice

    black salt to taste

    1 tbsp. coriander leaves chopped

    Instructions

    1. Boil arbi in a pressure cooker in adequate water. It normally takes about 2 whistles. Arbi should be cooked not mushy.
    2. Peel and chop the arbi into round pieces or coin sized pieces. Keep aside.
    3. Heat oil. Add cumin and asafoetida. Allow them to sputter.
    4. Now add arbi pieces and let them become golden brown.
    5. Now add all the spices and salt and cook for about 5 minutes more.
    6. Garnish with chopped coriander or mint leaves and serve hot.
    7. If cooking during fasting substitute normal salt with sendha namak or black salt and oil with ghee. 
    8. Also omit coriander powder and amchur powder, replace with lemon juice for fasting.

    Notes

    1.Arbi is also called taro root.
    2. This vegetable is similar to potato.
    3. If cooking during fasting substitute normal salt with sendha namak or black salt and oil with ghee. 
    4. Your simple and nutritious arbi ki sabzi or vrat wali arbi is ready to eat.

    Peel and chop boiled arbi.

      Oh I love this recipe. It's quite what my mum used to make except she seasoned it with Ajwain and she sprinkled some besan or atta during the frying. I am not sure why, need to ask her.

      PS: When I click on the Indian flag I don't see the recipes, though I could in the morning. Now I only have the English version.

        Yep, I make that version too. Ajwain goes very well with arbi and yes the besan too. That gives arbi a crispy coating. 🙂 The Hindi one is loading just now. Don't know what had happened.

      I love Arbi. I love all root vegetables to be honest. This is the best way to make it apart from slicing them thinly and deep frying it! I use the exact same recipe as your except once cooked, I add a handful of freshly grated coconut to it. It adds a nice texture and flavor to it.

      My Ma used to make the same version of Arbi and though I detested it as a kid, I had grown up to enjoying it, especially with ghee slathered roti and masoor daal. Yum. This looks totally delectable and I can’t wait to try it out soon. Thank you Rachna,
