These zucchini chips in air fryer are done without any breading or flour. These are vegetable chips that are essentially dehydrated zucchini. They are so tasty and crunchy, perfect low calorie snack.
Zucchini is among my favourite vegetables.
Especially when cooked in the air fryer, its taste is really enhanced.
During summer, when you get them copiously, these recipes are such a life saver.
You may like air fryer potato peelings, air fryer zucchini boats, roasted zucchini without breading, air fryer zucchini and squash, zucchini fritters and zucchini fries.
Health Benefits of Zucchini
As a summer vegetable and gourd
- Zucchini is high in water. Helps keep the body hydrated.
- It is low calories: Since zucchini is made up of mostly water, it is very low calorie and hence a great choice for stir fries, grilled, air fried or in a medley of vegetables.
- It is packed with vitamins, minerals and important nutrients.
Tips to Make Best Zucchini Chips
The best tip is to cut zucchini slices really thin. A mandolin does a good job of cutting even, thin slices.
If you don’t have a mandolin, use your Chef’s Knife and slowly slice even slices
Then make sure that you dry them really well with paper towel. This is because they contain a lot of water.
If they are very soggy when you place them for air frying, they will take very long to crisp up or may not crisp up at all.
Coat zucchini slices with spices and oil and immediately put them in the air fryer.
This is to prevent them from releasing water when they are sitting with spices and salt on them.
Preheat air fryer before putting in the chips. This helps in starting the cooking process right away.
Put them in one layer or minimise overlap as much as possible.
Keep opening the basket once every few minutes and remove the chips that look browned on the edges and have crisped up.
This allows the others to cook optimally and none to get burned.
You will need to do these in batches, but they get done quickly.
Storage:
- You can store them for upto 2 weeks in an air tight container at room temperature or fridge.
- You will need to heat them up in air fryer to crisp them up before consuming.
- It is better not to freeze them as they may not keep well.

Using a sharp knife, snip off the end off zucchini. Leave the skin on.
Now using a mandolin slice zucchini into very thin slices or chips.
In case you don’t have a mandolin, use your knife to achieve similar-sized zucchini slices.
Assemble olive oil in a bowl. Assemble various spices and salt in a bowl.
Add oil and spices to the sliced zucchini.
Mix them well. Meanwhile, preheat the air fryer to put them in immediately.
Air frying Instructions:
Preheat air fryer at 160C or 320F for 5 minutes.
Lay zucchini chips in air fryer without much overlapping. One layer is preferred.
Air fry for about 8-10 minutes at 320 F or 160C.
You will notice that some chips will start browning on the edges and crisping up.
Remove them. Check every minute and remove more till all are done.
You may need to do more than one batch. Your crispy delicious zucchini chips are done.
Enjoy them with your favourite dip.

2. For seasoning you may mix it up by using ranch seasoning, Cajun seasoning, Fajita seasoning or any other ready spice mix of choice.
