Aloo Poha or Kanda Poha is a favourite breakfast and snack in many parts of India. I had this Maharashtrian Poha Recipe for the first time when I came to live in Mumbai and immediately fell in love with it. It is really tasty especially with peanuts and potatoes and now with peas. And the best part, poha is so very simple to cook. You will barely need 15 minutes if you have all the ingredients at hand.

    Instructions

    • Drain all water from the soaked poha and keep it in a colander for the remaining water to drain out.
    • Heat oil in a kadhai, add in the mustard seeds and cumin seeds along with peanuts.
    • Allow them to sputter.
    • Now tip in the slit green chillies and curry leaves and cook for a minute.
    • Tip in the chopped onion and cook till it is transparent.
    • Now add in the boiled potato and peas and cook a bit. Add salt, turmeric and drained poha (beaten rice) and mix well.
    • Cover and cook for about 4-5 minutes. Taste and adjust salt if necessary. Take it off the fire and pour lemon juice.
    • Garnish with cilantro leaves and fresh grated coconut (if using) and serve hot.

    Notes

1.You can fry the peanuts separately in oil and then add to the poha while serving. That way they stay crunchier. 2. If you don't have boiled potato. Chop the potato fine. Microwave for about a minute and then add to oil with onion to cook. You can skip the microwave step and cook the potato separately with tempering. 3. You can use fine poha (rice flakes). Then, you don't need to soak it. Just take in a colander and pour some water on it to suitably prep it. You can also use red rice poha or rice flakes for more nutrition.

One of my absolute favorites! We add almost 5-6 vegetables to make it mouthwatering (I know I am praising Saru here) ?

This is my go-to breakfast on most weekends and I got the recipe from my mom, who grew up in Nagpur so she makes it the typical Maharashtrian way, very similar to yours. We just add potatoes and onions though and the peanuts occasionally. YUM!

Yep, this is the Maharashtrian way as well. After your comment I realized that I had forgotten to mention onion, so went back and edited the recipe. 🙂 For me, my poha is not poha without peanuts. Did you know that peanuts provide the protein in this breakfast to make it balanced? The peas are a later addition only because the husband loves it. 🙂
