These air fryer shrimp fajitas are perfect when you are looking to spruce up something tasty, quick, and healthy.
Fajitas are my favourite as they really are wholesome and so versatile too.
These chicken fajitas in air fryer are delightful.
Most days I just skip the tortillas and have them low carb.
Shrimp really cook so well in the air fryer.
So much so that I try to cook most of my shrimp dishes in the air fryer now.
From butter garlic shrimp to Bang Bang shrimp, Cajun shrimp to Buffalo shrimp and Popcorn shrimp in air fryer all turn out good.

Ingredients
1. Shrimp: Use 1 pound or 500 gm. Shrimp, peeled and deveined.
I have used large ones.
2. Bell Peppers: I have used red, yellow and green for a variety of colours.
Use ½ each.
3. Onion: 1 large onion is finely sliced and used here.
4. Fajita seasoning: 2 tbsp. of fajita seasoning is used in this recipe
5. Olive oil: I have used 2 tsp. Olive oil.
For Serving
Tortillas: 6 small tortillas.
Optional Toppings: Guacamole, sour cream, and salsa.
Variations and Substitutions
1. Try different Protein: You can use chicken. For vegetarians, paneer works well.
Tofu is good here as well.
2. Try other Veggies: You can add other vegetables like zucchini slices, carrots or mushrooms here.
3. Spices: You can try other spice mixes like Cajun seasoning or taco seasoning.
4. Skip Tortillas: Use lettuce wraps for a low-carb version.
Or like me, just have the fajitas without any outer wrap.
5. Vegan version: Use tofu and avoid any dairy toppings.
Serving Suggestions
1. Serve deconstructed: Serve all the individual elements on a platter and let everyone assemble their own.
2. Fajita Bowls: Serve fajitas with some fried rice or in a bowl of quinoa.
3. With sides: Serve with a side of chips and salsa for a delicious snack.
Instructions
Take 1 lb. or about 500 gm. peeled and deveined shrimp or prawn.
I did not leave the tail on, but you can for aesthetics or convenience.
Take ½ each red, yellow and green bell pepper or capsicum.
You can take more too if you want to have more veggies.
Slice them into long strips. Remove the veins and seeds.
Take one large onion and slice into thick strips.
Assemble the spices. In this case I am using fajita seasoning along with some added pepper.
In a bowl, mix sliced peppers and onions with half the fajita seasoning, pepper and half olive oil.
You can use 1 tbsp. lemon juice as well.
Mix well.
Repeat the same with shrimp too.
Air fryer Instructions
Preheat air fryer at 360F or 180C for 5 minutes.
Lay the seasoned veggies in one layer in the air fryer basket.
Air fry at 360F or 180C for about 4 minutes till veggies are half done.
Now move the veggies to one side and add the seasoned shrimp to the air fryer basket.
Make sure there is no overlap.
Shrimp is added later as it cooks faster than the veggies.
We don’t want to overcook the shrimp.
Air fry at 360F or 180C for about 5-6 minutes till the shrimp is nicely cooked.
This time may vary a bit depending upon the size of your shrimp.
Your delicious air fryer shrimp fajitas are ready.
I love to have them as this paired with some sliced avocado.
But if you want warm tortillas on pan or air fryer. Add sauces and salsa of choice.
Add air fryer shrimp and vegetables and add cheese if you so like. Serve them hot.
Stovetop Method
If you do not have an air fryer, you can do the same on stove top in a skillet.
Follow the same recipe for seasoning the veggies and shrimp.
Heat a skillet.
Lightly brush with oil. Add seasoned shrimp and cook on both sides for about 1-2 minutes each side.
Once done, take it out.
Add seasoned veggies to the skillet.
Saute on low heat till slightly charred on the edges and cooked.
Take it out and mix with shrimp.
Now assemble your fajitas just like the above method.
Expert Tips
1. Avoid overlapping: It is important that you air fry in one layer. Any overlapping will lead to uneven cooking of the shrimp and veggies.
2. Cut veggies evenly: Cut veggies in similar sized slivers to ensure that they cook evenly together.
3. Adjust seasoning: Taste and adjust seasoning as per taste. You can also make your own seasoning.
4. Storage: These shrimp fajitas are best served fresh. If you have leftovers you can reheat them in the air fryer till heated through.
Just ensure that the shrimp do not get overcooked.

Yes you can. But it would be better to thaw them before using them in this recipe.
