Air fryer chicken tacos are one of those meals I keep coming back to when I want something quick but still really satisfying. The chicken cooks fast, stays juicy and gets those slightly crisp edges that make a big difference once it's tucked into a warm tortilla.
This is the kind of recipe that works on busy weeknights, lazy weekends or even casual get-togethers. You can keep it simple or load it up with toppings depending on what you have in the fridge.
It is also a great recipe for meal prep and leftovers go a long way too.

Ingredient Breakdown
Chicken: I have use chicken breasts here that have been cut into strips. Chicken thighs work well too.
Olive Oil: Helps the seasoning stick and keeps the chicken from drying out in the air fryer.
Spices: I have used taco seasoning. But, a simple mix of chilli powder, paprika, cumin, garlic powder and onion powder gives you that classic taco flavor without needing a marinade.
Tortillas: I have used store-bought corn tortillas here, but flour ones work just as well.
Toppings: This is where you can customise the recipe any way you like. I always use shredded cheese, shredded protein and some veggies along with a dip.

Instructions
Pat the chicken dry with a paper towel. Then cut in cubes. In a bowl, add Taco seasoning mix from Trader Joe's along with olive oil. Rub this mixture all over the chicken so it is evenly coated.

I have also air fried sliced onion and green pepper strips also tossed in the same seasoning along with chicken cubes. You can do the same or just air fry the chicken cubes and use sliced veggies later.
Preheat the air fryer to 360F or 180C for about 3 minutes. Place the chicken (with veggies) in the air fryer basket in a single layer.

Air fry for 12 to 15 minutes, flipping halfway through. Cooking time will depend on size of chicken cubes. The chicken should reach an internal temperature of 165F and be nicely cooked through. The veggies also turn crispy.

Remove the chicken and green peppers and onions and keep aside. Slice or shred the chicken.
Fill warm tortillas with the chicken, roasted onion and peppers, chopped tomatoes, shredded cheese blend and any other favorite toppings to midway. Fold them over to form tacos.

I then pop them in the air fryer for a couple of minutes at 180C or 360F to toast them lightly and also melt the cheese.

Your air fryer chicken tacos are ready to serve. Enjoy. Easy to assemble for a quick, healthy meal. Serve hot with guacamole or your favorite dip.

Expert Tips
You can air fry the veggies along with chicken if you like them crispy and roasted else skip that.
If using chicken thighs, you may need an extra 2 to 3 minutes depending on size.
For extra flavor, toss the cooked chicken with a spoonful of salsa or a drizzle of sauce before serving.
Leftover chicken can be stored in the fridge for up to 3 days and reheated in the air fryer or on the stovetop.
