    Vegan Sprouted Lentil Salad Recipe

    This sprouted lentil salad is not only nutritious but is tasty and filling as well.

    Made using steamed sprouted lentils along with fresh vegetables and a light dressing, this can be an evening snack, a salad, a side or even a light meal.

    It keeps you satiated, and you will not be able to have just one serve.

    Lentils and bean are protein powerhouses. You can sprout green gram whole, black gram, black eyed peas, orange lentils and any others that strike your fancy.

    How to Make Sprouted Lentils

    1. To make spouts, wash and soak lentils and pulses overnight or at least for 8 hours.
    2. Drain the soaking water in the morning, wash again and keep it in a colander covered with damp cheese cloth. Wash or lightly drench with water while leaving it in the colander two or three times in the day. Keep covered with damp cloth. You should start seeing small sprouts by the evening.
    3. You can either refrigerate then or keep it overnight again for longer sprouts. Your lentil sprouts are ready to be used.

    Is it okay to have raw lentil sprouts?

    It is perfectly fine to have raw sprouts. That is the optimum state to access all the nutrients.

    But some people may find it a bit hard to digest and don't like the raw taste. I prefer to steam the sprouts for about 3-5 minutes and then use.

    Here is the recipe of Vegan Sprouted Lentil Salad

    Ingredients

    2 cups steamed sprouted lentils

    1 cucumber finely chopped

    1 tomato finely chopped

    ½ red onion finely chopped

    1 green chilli or jalapeno finely chopped (optional)

    For the dressing

    1 tbsp. extra virgin olive oil

    1 tbsp. apple cider vinegar

    1 tsp. minced garlic

    A pinch of sugar

    Salt to taste

    ½ tsp. fresh ground pepper

    Garnish

    1 tbsp. chopped mint and cilantro

    Recipe:

    Take the steamed sprouted lentils in a bowl.

    In a bowl, make the dressing by mixing together extra virgin olive oil, apple cider vinegar, minced garlic, salt, sugar and pepper.

    Pour over the mixed veggies and sprouted lentils well.

    Chopped cucumber, tomato, onion, green chillies, cooked lentil sprouts and garlic in a white bowl.

    Mix well. Garnish with chopped mint and cilantro leaves.

    Your vegan sprouted lentils salad is ready to consume. Enjoy!

    Pro Tips

    1. This salad tastes best when chilled.
    2. It is best to have it fresh though some people enjoy leaving it for an hour in the fridge for the flavours to be better absorbed. Though, it will get watery and lose its crispness.
    3. You can totally not have green chilli or even pepper. Go with your taste.
    4. You can make this salad with any sprouts.
    5. Feel free to use peppers, corn, lettuce or any other veggies of your choice.
