    Super Easy Black Eyed Pea Salad Recipe

    This is super easy black eyed pea salad recipe that you can rustle up in about 15 minutes. It is healthy and nutritious.

    Black eyed peas or lobia are very popular beans in India and I regularly make lobia or vegan black eyed pea curry that is super flavourful.

    These beans are bursting with protein and vital nutrients. If you are a vegetarian or vegan, this is the perfect food for you especially since it is high in plant protein.

    Now, I have the habit of sprouting a lot of beans and legumes at home regularly.

    So I had sprouted black eyed peas that I turned into a fresh salad or salsa to have for an evening snack.

    You know those 4 pm snacks that we usually tend to reach out to junk food for. Well, they can be quick, tasty and healthy as well.

    You may also like: cucumber radish salad, cucumber, tomato salad, avocado cucumber salad and Indian cucumber salad with yogurt.

    Ingredients:

    2 cups sprouted black eyed pea (boiled)

    ½ red onion finely chopped

    1 tomato finely chopped

    1 jalapeno finely chopped (optional)

    1 tbsp. cilantro or coriander leaves finely chopped

    ½ tsp. cayenne (red chilli powder) or pepper

    1 tsp. lemon juice

    salt to taste

    Recipe Instructions for Black eyed pea salad:

    1. Boil sprouted black eyed peas in some water to which salt has been added. I boil for about 7-8 minutes till tender but not mushy.
    2. Drain and keep aside.
    3. Now mix all the ingredients well and serve immediately.
    4. You could alternatively store it in the fridge for a few hours.

    Pro Tips:

    1. It tastes best when eaten fresh.
    2. It is vegan and high protein.
    3. This black eyed pea salad is very delicious with fresh flavours.
    4. You could make black eyed pea salad with avocado too to add a creamy element.
    5. You could also add chopped green pepper to the salad as well or other veggies of your choice like corn, boiled peas etc.

      I love love loveeeee Lobia. I usually a sabzi out of it and occasionally add it into salads as well. It is so delicious and healthy!
