Roasted carrots in air fryer come out really delicious. It is a lovely vegetable side and we often have it as a snack too.

Air fryer is such a godsend when it comes to preparing veggies. They come out perfectly roasted with a slight crispness outside while being perfectly cooked inside.

You can use any combination of seasonings you like. Here I have made savory air fried carrots but I like the sweet ones just as much.

You may also like: roasted zucchini in air fryer, air fryer parsnips, zucchini fries in air fryer, air fryer eggplant fries, air fryer butternut squash, air fryer corn on the cob, cheesy broccoli bites, crunchy oyster mushroom, air fryer baby potatoes and crispy okra

    Tips and Tricks

    1. In order to reduce air frying time, you can cut carrots into large chunks, fries or roundels. Alternatively you could also microwave them or parboil them for 2-3 minutes before air frying.

    2. Do not cook at very high temperatures as the carrots can end up overcooking and even burning while becoming hard.

    3. You can also cook baby carrots in a similar manner.

    4. It is easy to use spices and herbs that you enjoy. You can also make both savory and sweet versions.

    5. Fresh carrots are the best for this recipe.

    7. If you want a zero-oil version, just skip the oil and toss your seasonings in vegetable broth. Toss your carrot pieces in these and air fry.

    Variations:

This recipe is already vegan, vegetarian and gluten free.

You could use avocado oil in place of olive oil if you like.

You can also use any combination of herbs or spices that you prefer.

Sweet version: For sweet roasted air fryer carrots, I use 1 tbsp. maple syrup, a pinch of Himalayan pink salt, ½ tsp. pepper powder and 1.5 tsp. olive oil for seasoning the carrots before air frying.

Skip the oil if you want an oil-free version.

    Stepwise Pictures

Take the carrots. Wash them well. Peel them and cut them into chunks or fries.

This is done to ensure faster roasting of carrots.

    Whole carrots take much longer.

Peeled carrots with one carrot cut into smaller pieces on a brown chopping board.

Add all the spices to the carrots.

Bowls having garlic powder, pepper and Himalayan pink salt with olive oil and cut carrots.

Now add the olive oil and mix everything so that all carrot pieces are well coated.

If you want a zero-oil version, just skip the oil and toss your seasonings in vegetable broth. Toss your carrot pieces in these and air fry.

    Air frying Carrots

Preheat air fryer at 180C or 360F for 3 minutes.

Brush the basket with oil and put in all the carrots. It’s okay if they overlap a bit.

Preheated air fryer with marinated carrot chunks in basket.

Air fry for about 9-10 minutes at 360F or 180C till they are lightly browned and cooked.

I shake the basket once every 3-4 minutes to ensure even cooking. The carrots shrink after air frying.

Your carrots are done. Don’t overcook them or they will dry out inside.

I love them browned outside and soft cooked inside.

They are delicious. Serve them as a veggie side or even a tasty snack. My teen devoured them gladly.

    Notes

    1. This recipe is already vegan and vegetarian. It is super easy to make.
    2. If you want a zero-oil version, just skip the oil and toss your seasonings in vegetable broth. Toss your carrot pieces in these and air fry.
    3. Try to cut carrots into even-sized pieces for uniform cooking. You can cut them into chunks or fries. Leaving the carrots whole increases the cooking time by a lot.
    4. You can use melted butter in place of olive oil for a more buttery flavor. Or skip the oil all together.
    5. You can also use any herbs or spices of your choice. Garnish with chopped parsley or cilantro leaves.
    6. You can make the carrots sweet as well. I have shared my seasonings for sweet carrots above the recipe card under variations.
    7. Vegetables turn out so good in the air fryer. Do try them out.
