This fresh corn salsa recipe is quick to make and a super delicious and healthy salad to include in your diet.
I use roasted corn on the cob along with finely chopped fresh veggies to make this delightful corn salsa.
You can air fry the corn on the cob or use frozen corn that can be grilled, microwaved or air fried and used in the recipe.
You can try this antipasto salad for a delicious wholesome salad option with meat. This mango corn salsa is so delicious as well.

Here is my easy corn salsa recipe:
Ingredients:
2 grilled corn ears or 1 cup corn
¼ onion chopped finely
2 jalapenos or green chillies finely chopped
2 tbsp. cilantro or coriander leaves finely chopped
salt to taste
1 tsp. ground black pepper
2 lemons juiced
½ avocado finely chopped (optional)
some cherry tomatoes halved (optional)
Recipe:
Grilled corn does taste better. You could grill it on stove top or a grill. You could even steam the corn in the microwave if you so prefer.
Mix all the ingredients well. Add salt and pepper to taste along with lemon juice.
Serve immediately.
Pro Tips
Since there is a lot of lemon juice in this recipe, the avocado stays good.
In case you are not planning to immediately consume it, you can leave out the salt and pepper and add it just before serving.
You can leave out avocado or cherry tomatoes as per your choice.
You can choose to use less or more onion, as per your taste.
