This creamy cucumber salad is one of those no-fuss recipes that is so homely and delicious. Cool crisp cucumbers tossed in a light, tangy dressing that is simple yet satisfying.
Generally, I make a large batch of this salad that lasts at least a couple of days. The creamy dressing takes just a few minutes to whisk together, but the salad tastes best when kept in the fridge for an hour or two.
It is a mild, tasty and super comforting salad. Also I have kept it healthyish by using Greek yogurt instead of sour cream in the recipe.

Ingredients
Cucumber and Onion: I have used English cucumbers here and have kept the skin intact. You may use larger cucumbers and peel them if needed. Also a small red onion is used for crunch and flavour.
Yogurt: Greek yogurt is using for creaminess in the dressing.
Mayonnaise: Totally optional, but I like adding a tablespoon for a creamier texture.
Sugar, Salt, Pepper: These balance the tang from the yogurt and vinegar and round out the flavours.
Apple cider Vinegar: Adds flavor and tanginess to the dressing.
Dill: It is perfect for cucumber salad.
Instructions
Take 1 lb. or ½ kilo English or Persian cucumbers. I did not peel them.
Just slice them thinly. You can use a mandolin too. Then peel a small onion and slice it as well.
Add 2 tsp. salt and keep aside for 15 to 30 minutes. It will release water. Drain it and then lightly wash the cucumber if it tastes too salty.
I also spin them in a salad spinner to further drain water. You could dry by leaving in a colander for some time.
In a bowl, whisk together the yogurt, mayonnaise (if using), sugar, salt, pepper, vinegar and chopped dill till you have a smooth dressing.
Add this dressing to the cucumber and onion slices and mix. Ensure that all slices are coated. Taste and add more salt, if needed.
Now cover and place in the fridge for 1-2 hours. Then serve your creamy cucumber salad. It is delicious.
You can save leftovers in the fridge for upto a day. It tastes really good.
Expert Tips
1. If you want a more creamy and luxurious dressing, you can use ½ cup of mayo or sour cream instead of yogurt.
2. Salting the cucumber and onion before adding the dressing, keeps the salad creamy and avoids it becoming watery.
3. You may add sliced radish as well to the salad.
4. Dried dill can be used in place of fresh dill here.
5. If you want more dressing in your salad, you can add some more yogurt or mayo to the salad. Remember to add more salt and pepper too along with more vinegar.
