    Chicken and potatoes done in air fryer is such a satisfying meal. Comes together in under half an hour, it is a favourite in my home. Best of all, you can vary the seasonings as you like.

    I always maintain that air fryer cooks chicken so well while retaining moisture. I absolutely abhor stringy overcooked chicken. I have made dozens of chicken dishes in the air fryer and have never been disappointed.

    This air fryer chicken dinner really makes it easy to serve a nutritious and satisfying dinner with barely any prep or cooking because air frying time barely needs any supervision from you. Perfect for busy workdays.

    These roasted air fryer chicken and potatoes are quick and easy to make. Less than 30 minutes and dinner is on the table.

    The recipe is so easy and forgiving. vAry the spices used to suit your taste. There is no lengthy marination or breading or flour used.

    Every thing is cooked in one air fryer basket so super easy to clean. Best of all the flavour is so good. Crispy texture while remaining juicy and tender on the inside. What's not to like!

    Ingredients

    1. Chicken: I have used boneless, skinless chicken breast cubes. You can use boneless chicken thighs as well.

    2. Potatoes: I used bite-sized cubes of peeled potatoes. Yukon gold, red potatoes or russet work well. I have peeled them but you can keep the skin on. You can use baby potatoes too.

    3. Olive oil: I used 2 tbsp. for flavour and for adhering the spices.

    4. Seasonings: I used a seasoning mix of garlic powder, onion powder, pepper, paprika, Italian seasoning and salt.

    5. Garnish: I used chopped parsley for garnish.

    Variations and Substitutions

    Swap potatoes with sweet potatoes for more nutrition and a change of taste.

    You can use spices as per your liking. Use cayenne or chili flakes for a spicier hit. Use sumac for a citrusy note. Use cumin for an earthy taste. 

    For a meat-free option, you can use tofu or tempeh cubes in place of chicken. You can use paneer if you eat dairy.

    Serving Suggestions

    I find air fryer chicken and potato cubes to be a complete meal but you can pair it with some sautéed veggies or a nice salad.

    You can also serve with a dip of choice along with a nice beverage.

    Instructions

    I try to cut the potatoes and chicken into similar bite-sized pieces of about 1 inch cubes. Dry them and keep aside.

    Assemble the spices you are using and mix them well with salt. 

    Preheat air fryer at 180C or 360F for 5 minutes. Meanwhile, take potato cubes in a bowl, add half the seasoning mix, about 1 tbsp. with half the olive oil which is also 1 tbsp.

    Mix them well so that all the potato cubes are coated well.

    Spread them out in the air fryer basket in a single layer.

    Air fry at 180C or 360F for about 8 minutes till they are half done.

    While the potatoes are being cooked, take chicken cubes in a bowl and add the remaining seasoning mix along with olive oil to it. Mix well so that the chicken cubes are well coated.

    After 8 minutes, push the potatoes to one side of the basket. Place the raw seasoned chicken bites in the air fryer basket on the other side.

    Air fry for 10 minutes at 180C or 360F. I checked with a meat thermometer. Once the temperature is above 165F in the thickest part of the chicken, it is cooked.

    If you need more time or your chicken cubes are thicker, air fry for longer.

    Once done, your chicken and potatoes will be delightfully crispy and succulent inside. Take them out and serve hot.

    Your simple yet flavourful chicken and potatoes in air fryer are done. Garnish with chopped parsley and enjoy.

    Storage Instructions: You can store the leftovers after cooling them, in the fridge for 2-3 days. Then reheat till heated through in the air fryer and consume.

    You can freeze them for upto 1-2 months. Don't thaw. Reheat straight in the air fryer and consume.

    Expert Tips

    1. Do not allow overlap in the air fryer basket or the potatoes and chicken will not cook evenly. They will shrink a bit as they cook.

    2. Cut both potatoes and chicken in uniform bites so that they cook evenly. 

    3. If you are using larger breasts or boneless thighs you will take more time to cook the chicken through.

    4. Use a meat thermometer to check for doneness of chicken. That way your chicken will neither be underdone nor overcooked.

    5. Vary the seasonings as per taste. I have used about 2.5 tbsp. of seasonings on the chicken and potatoes. I mix the seasonings and keep in a small jar in the fridge for use with both veggies and meat.

    6. You can use any spice mix that you like eg. Cajun seasoning, peri peri seasoning, Jamaican jerk, BBQ seasoning or Old Bay too. Just go with what you like.

    7. You can use other veggies like broccoli, bell peppers, onions or zucchini along with potatoes in this recipe.

    8. If you are using frozen chicken, make sure to thaw it before using here.

      I have never thought to cook both chicken and potatoes together in my air fryer. What a great way to minimize cleanup and get a full meal from my air fryer. Thank you so much for this easy recipe!
