Ingredient Breakdown
Fingerling Potatoes: These have very thin skin and need no peeling. The skin crisps up really well.
Olive Oil: A light coat helps the seasonings stick and gives the potatoes that golden roasted look.
Seasonings: Salt and pepper are the basics, and I like adding garlic powder, paprika and unsalted Cajun spice mix for extra flavour. You can add any additional seasonings that you like.
Herbs: Fresh cilantro or parsley work well. Dried herbs are okay too.
Instructions
Wash and scrub the potatoes and pat them dry.
You can cook them whole. I cut them in halves leaving the skin on.
In a mixing bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, paprika and Cajun spice mix until evenly coated.
Preheat the air fryer to 200C or 400F for 4 minutes. Spread the potatoes in the basket in a single layer.
Cook for 13-15 minutes at 200C or 400F, giving the basket a shake halfway through, until the fingerling potatoes are crisp outside and tender inside.
Serve roasted fingerling potatoes hot after garnishing with chopped cilantro or parsley. They are really delicious and get over in minutes.
