Air fryer Fingerling Potatoes

These delicious and crispy air fryer fingerling potatoes are a perfect side or snack to make. Very easy recipe too.

Ingredients

  • 1 lb. fingerling potatoes
  • tbsp. olive oil
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. garlic powder
  • ½ tsp. paprika or red chilli powder
  • 1 tsp. Cajun seasoning
  • 1 tsp. fresh herbs for garnish

Instructions

  • Wash and scrub the potatoes and pat them dry. You can cook them whole. I  cut them in halves leaving the skin on.
  • In a mixing bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, paprika and Cajun spice mix until evenly coated.
  • Preheat the air fryer to 200C  or 400F for 4 minutes. Spread the potatoes in the basket in a single layer. Cook for 15 minutes at 200C or 400F, giving the basket a shake halfway through, until the fingerling potatoes are crisp outside and tender inside.
  • Serve them hot after garnishing with chopped cilantro or parsley. They are really delicious and get over in minutes.

Notes

1. Make sure to dry the potatoes after washing so they crisp up nicely, and the seasoning adheres properly.
2. You can vary the seasonings used as per taste and availability.
3. Shake the basket once or twice so the potatoes cook evenly.
4. Adding nutritional yeast gives them a nice cheesy taste.
5. If you have leftovers, pop them back in the air fryer for a few minutes and they will crisp right back up.
