This classic recipe, cheesy quesadillas gets a delicious makeover in the air fryer. I love quesadillas. So cheesy, quick and easy to make especially if you have some leftovers.
You really can’t go wrong with cheesy quesadillas. All you need to do is add your favourite topping to the quesadillas along with grated cheese. Air fry and you have a fabulous quick snack or meal.
These will work as excellent finger food on game days too. Need barely any time to put together.

Ingredients
Tortillas: I have used 2 flour tortillas that were store bought. You can use corn ones too. Even Indian rotis work well here.
Cheese: I have used shredded Cheddar for its sharp taste and lovely meatiness. You can use mozzarella or even taco cheese blends.
Filling: I had some leftover kidney beans curry or rajma curry that I used as a filling here. Baked beans or refried beans and chili also work well. I used ½ cup thick smashed filling here.
Variations and Substitutions
This recipe is really versatile and customisable. To make it vegan, use a dairy-free cheese option.
If you love meat, you can use your choice of protein here. This recipe is also perfect for the use of leftovers.
For a gluten-free version, you can use corn tortillas or gluten-free tortillas.
Add-ons: Feel free to use chopped or pickled onions, pickled beets, chopped scallions, jalapeños, olives, chopped cilantro or parsley here.
Serving Suggestions
Serve air fryer quesadillas with a dip like guacamole, sour cream, salsa or anything you like. You can also pair it with a salad.
They are also good as finger foods or snacks in a party platter.
Instructions
There are just 2 basic steps in preparing quesadillas. Shred the cheese you are using and assemble the tortillas.
For the filling, you can prepare from scratch by cooking shredded protein and vegetables with basic spices, onions and crushed ginger and garlic. Make a thickish filling. It should not be runny and let it cool down completely before using.
I have used leftover rajma curry that was heated to thicken it. Then I smashed the kidney beans with the back of a ladle to make a very thick bean base. You can use refried beans, leftover chili, baked beans as a filling.
To assemble the quesadillas, place a tortilla on a surface. Cover half of it with your filling. You will use about 2-3 tbsp. Spread it out well. Then top with shredded or grated Cheddar or cheese mix.
Fold the tortilla to form half moon shape and press down well.
I did not preheat the air fryer this time and straight away placed the prepared quesadilla in the air fryer basket.
Air fry for 6-8 minutes at 360F or 180C. Flip midway for even browning. Since the filling was already cooked, this time was just needed to crisp up the tortilla and melt the cheese.
It's okay if some of the filling or cheese starts spilling out. I love to fill my quesadillas generously.
Your air fryer quesadilla is ready to eat. Serve it with some sour cream or guacamole. It is so delicious. Enjoy.
Expert Tips
1. Customize the fillings as per your like. Leftovers work great. Just ensure that the filling is thick and not runny.
2. Flip quesadilla midway during air frying for even browning.
3. I did not need to oil the quesadilla. If you wish to you can spray with oil lightly.
4. You can use cheese of your choice. I have used grated Cheddar. Taco cheese mix is also good.
5. Also you can spice up the filling and use any sauces you like. I sometimes use Sriracha sauce for heat.
6. You can store quesadillas in air tight container in the fridge for upto 2 days. Reheat in air fryer for a couple of minutes till heated through and serve hot.
