This cucumber radish salad is perfect for summer. It is light and flavourful. Comes together in just 5 minutes.
Both cucumber and radish are vegetables that are perfect for summer with their high water content and fresh flavours.
A simple salad with some chopped onion and a light dressing complements any meal.
I actually eat cucumber around the year and make many cucumber salad recipes.
You may also like cucumber, tomato salad, avocado cucumber salad and Indian cucumber salad with yogurt.
You can also add other vegetables like peppers, corn, lettuce etc. if you like.
Salads are a great way to get your 5 servings of fruits and veggies daily.
Sometimes, I have them as a meal by adding feta or cottage cheese to them.
What Goes Into the Salad Dressing
I have tried these salad dressings for this radish salad:
1. Oil and vinegar dressing: This is definitely a favourite dressing. I use extra virgin olive oil and apple cider vinegar or white wine vinegar here.
Add minced garlic, salt, herbs and spices of choice to this and use.
2. Lemon juice dressing: Use extra virgin olive oil along with lemon juice, pepper, salt, minced garlic and Italian seasoning and use.
You can even skip oil in this dressing.
Tips for Making the Best Cucumber Radish Summer Salad
1. Use fresh green cucumber and radish. You can use smaller tender English cucumber. You can leave the peels on in these.
I sometimes use the larger cucumbers where I take off the peels. I do not take seeds out if they are tender.
2. Use red onion: I like the zing from red onion and use only half of it in this salad.
You can skip it if you don’t like or use white onion instead.
3. Marinate: I serve the salad right away as I prefer the veggies to be crisp.
But you can leave the salad for about 10-15 minutes after adding the dressings for a more intense flavour.
That way the salad gets more flavourful.
4. Spices and herbs: Just salt and pepper tastes good here. I love to use minced garlic in my salads.
You can also use chilli flakes for some heat. Italian seasoning works well too. Fresh herbs like dill, cilantro or mint work well too.
5. Cut all veggies to similar sizes. Assemble the dressing. Mix well and serve.

Made it and loved it. My Mother made a similar one when I was growing up. Hers was a little sweet so I added allulose to the dressing. We added halved small sweet cherry tomatoes when we served it.
I add shrimp to a lot of summer salads / pico de gallo. Thinking shrimp would be good in this.
