Ingredients

Garnishes

  • ½ cup pomegranate arils
  • 2 tbsp. roasted peanuts
  • ½ cup chickpeas optional
  • 2 tbsp. sev
  • ½ tsp. Chaat masala
  • 1 tbsp. lemon juice
  • 3 tbsp. Green chutney

Instructions

  • Peel sweet potatoes and cut them into ½ inch cubes. I have used white flesh ones here. Orange or purple work as good. Toss them in oil and garlic powder, cumin, salt and chilli powder.

Air fryer Instructions

  • I did not preheat the air fryer this time. Just spread them in a single layer in air fryer basket. Air fry at 190C or 375F for 15 minutes till they are nicely roasted outside and cooked inside. We want sweet potato to still hold its form and not get mushy.
  • Oven Instructions
  • Preheat oven to 400F or 200C. Line a baking sheet with parchment paper. Lay tossed sweet potato cubes on it.
  • Bake for 25-30 minutes till sweet potato cubes are nicely roasted. You can flip them midway.

Assemble the chaat

  • Transfer the cooked sweet potatoes in a shallow bowl. If using chickpeas, add 1 cup drained chickpeas here. Add some spicy green chutney and sweet tamarind chutney if using. Sprinkle lemon juice. Mix well.
  • Top with chaat masala or some Himalayan pink salt, pomegranate arils, toasted peanuts and fine sev.
  • Serve immediately. You will love the burst of delicious flavours in this sweet potato chaat. You can serve it at parties as a tasty appetizer.

Notes

1. Leftover baked sweet potatoes or boiled ones can also be used for this chaat.
2. Cut sweet potatoes into equal-sized cubes for even cooking.
3. While air frying or baking, spread our seasoned sweet potato cubes in one layer so that they cook evenly.
4. You can adjust spices as per your like. Chaat masala does add that chaat or street food touch to this, but if you don’t have it, substitute with some black salt.
5. I don’t like sweet chutney a lot, but feel free to top yours with some. You can buy tamarind chutney bottled on Amazon or make it at home.
6. You can easily prep this ahead of time. Roast sweet potatoes and store in the fridge. Assemble at the last minute.
7. You can also use some beaten plant-based yogurt or regular yogurt (for dairy eaters) and top on this chaat.
8. Storage Tips: Leftovers can be refrigerated for 2-3 days in the fridge. It is best to not add toppings if you are planning to store. Do assemble the chaat freshly.
