Ingredients
1cuphorsegram soaked in water overnight
1-2green chillies
4-5garlic cloves
1sprigcurry leaves
1tbsp.cilantro
1tsp.black saltoptional
Salt to taste
Juice of 1 lemonor tamarind juice 1 tbsp.
Instructions
Cook the soaked and drained horsegram in pressure cooker for 3-4 whistles till mushy and well cooked. If using sprouts, one whistle is enough. You can also cook on stovetop.
Now take 3-4 tbsp. of cooked horsegram and puree in a blender (if you want your soup to be thicker). Add to the boiled horsegram. I leave some cooked horsegram whole for a different texture.
Now blend together green chillies, curry leaves, garlic and cilantro leaves. Add to the boiled horsegram. Finish with lemon juice or tamarind juice and mix well.
Consume hot with boiled rice or just as is. It is tasty and really healthy.
Notes
I don't blend the sprouted legume but you can if you want your soup to be of uniform consistency. Generally I blend more of the legume which is unsprouted. This soup is runny and surprisingly tasty.I prepare black gram or chana soup in a similar way with black chana sprouts. You can use this recipe for green moong spouts as well. For Andhra style ulava charu, I have shared the recipe below this recipe card. The only difference is in the tempering. It is really simple yet tasty.
