Air fryer Banana Bread

Banana Bread is air fryer is easy and quick to make. It is perfect for a quick sweet indulgence. Very easy recipe.

Ingredients

  • 2 medium bananas mashed
  • 2 tbsp. sugar
  • ½ cup almond milk
  • 1 cup wholewheat flour or all-purpose flour
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • 2 tbsp. vegan butter or vegetable oil
  • 2 tablespoon nuts slivered
  • 1 tsp. vanilla extract optional

Instructions

  • Gather together the ingredients: bananas, plant-based milk, vegan butter, sugar, baking powder, baking soda, wholewheat flour and vanilla extract.
  • Mix together flour, baking powder and baking soda. Sieve them together to aerate and mix them well. Now add them to the wet ingredients.
  • For the wet ingredients mash bananas, add plant-based milk, melted vegan butter, vanilla extract, sugar and mix well.
  • Mix only till well incorporated. Do not overmix.

Air frying

  • Preheat air fryer at 320F or 160C for 4 minutes. Grease the sides of a Borosil container or cake tin or use a parchment paper to line and grease that. You can use mini loaf pans that fit in air fryer too.
  • Pour banana bread batter into it. Top with slivered nuts.
  • Air fry for 20 minutes at 320F or 160C or till it is done. Use a toothpick to check in the center. If it is cooked then the toothpick will come out clean. Otherwise air fry for a couple of minutes more till done. Cool for 10 minutes and then cut and serve.
  • You will get nice four serves which is a perfect one time treat especially for my family of four.
  • Serve your delicious banana bread hot as it is.

Notes

1. Use overripe bananas or those that are very easy to mash with a fork in the recipe.
2. I love to make this with whole wheat flour. It makes for a denser bread. You could use all-purpose flour too in the recipe. In which case you can skip baking powder.
3.. Additives like vanilla, chocolate chips, more or different nuts work well.
4. Do not overmix the bread batter.
5. I have used a rectangular Borosil container that I had. Cake tins are fine too. Check if it fits well into your air fryer.
6. You can store the banana bread in an airtight jar in a fridge for upto 3 days. Microwave or air fry to heat through and serve. Or serve it cold too.
