Watermelon Popsicles

This delicious and easy watermelon popsicles is simple and perfect. Just need 4 basic ingredients. You will love them for summer.

Ingredients

  • 3 cups watermelon seedless cubed
  • 2 tsp. Sugar or maple syrup optional
  • 1 tbsp. lemon or lime juice
  • 1 Pinch salt

Instructions

  • Cut watermelon into cubes. Remove the seeds completely. Then add the chopped watermelon cubes into a blender
  • Add sugar(if using), lemon juice and salt. Then blend nicely so that everything is blended well. If you enjoy your popsicles to have some texture, then you can leave some thicker pieces inside.
  • Pour this mixture into your popsicle molds. I use silicone molds as they are much more convenient to take the popsicles out from.
  • Close and freeze for 6-8 hours till frozen solid. When you are ready to demold, run the molds under warm water for a few seconds, then gently pull the popsicles out.
  • I leave the rest in the molds for consumption later. Enjoy your healthy homemade watermelon popsicles. Perfect summer treat for kids and adults alike.

Notes

1. Strain the juice if you want a smoother popsicle. Skip this if you like a slightly pulpy texture.
2. If your watermelon is very sweet, you may skip the sweetener. Though freezing does blunt sweetness a little bit, so add sweetener as per your taste.
3. Add small chunks of watermelon into the molds before pouring the juice if you want a bit of texture.
4. You can mix in mint leaves or a little coconut water for a different flavor.
5. Store popsicles in the freezer for up to 1 week. You may demoed and wrap each popsicle in parchment paper and then store in ziplock bags in the freezer.
6. You can make this recipe with other fruit like mango, pineapple, orange and any other pulpy fruit you enjoy.
